PAALAPPAM


                                                       PAALAPPAM



Palappam is one of the most traditional breakfasts in Kerala.We all know that there are many fans for our Kerala Appams all over India .In all functions and celebrations palappam is an unavoidable item in all christian families.Duck mappas, chicken stew , mutton stew, beef stew are the main combination for this appam.
                            

                                INGREDIENTS


  • Raw rice                -        2 cup
  • Dry Yeast              -        1/2 tsp
  • Sugar                     -        4 tbsp
  • Salt                        -        a pinch
  • Jeera/cummin        -       1/4 tsp
  • Water                    -        as required

                                     METHOD



  • Soak the rice for 4-6 hrs. Grind it to a fine paste.Take out 3/4 cup of batter from this and keep aside.






  •  Add yeast and sugar to it and grind once more.


  •  Take a pan, add the 3/4 cup batter(taken separately earlier) ,1 1/2 cup water, a little salt to it and stir well.Heat the pan and stir continuously .


  •  When the batter gets thickened as shown in the picture, remove it  from flame and allow it to cool.

 



                                       
  •  Once the boiled batter gets cooled add this to the ginded batter along with cummin.Mix well or blend for 2 mins.Keep this batter over night .The batter will become double the quantity in the morning.Now Appam batter is ready to prepare soft and tasty Appams.

Serve this Appam along with stew .....and ENJOY!!!!

CHICKEN BURGER



                                                     CHICKEN BURGER



Hand Burger is  a sandwich consisting of one or more  cooked patties of ground meat usually beef or chicken patties , placed inside a sliced bun roll..Now a days innumerable varieties of Burgers are available and many shops have also been opened exclusively for burgers.Hamburgers may be cooked  in a variety of ways, including pan-frying,barbecuing and flame -broiling.Hamburgers are often served with cheese onion slices tomato slices,lettuce,mayonnaise, and tomato ketchup.

                                         

                                   INGREDIENTS



  • Minced chicken                           -  1 cup
  • Pepper powder                             -  1 tsp
  • Fresh Bread grounded                 -  1/4 cup
  • Garlic powder                              -   1 tsp
  • Salt to taste
  • Tomato slices                              -   as required
  • Onion rings                                 -   as required
  • Buns                                           -    2 nos
  • Lettuce                                       -    2 leaves
  • Tomato ketchup                         -    2 tbsp
  • Mayonnaise                               -    as required
  • Cheese slice                               -    2




                                      METHOD





    •  In a bowl add minced chicken ,pepper powder and salt to it.




    •  Add fresh bread crumbs  to it.




    •  Add garlic powder to it.   Mix well and make two patties.






    •  In a pan add little butter and shallow fry both the sides of the patties.




    •  Cut the buns and just slightly fry it and apply mayonnaise and above that layer keep the tomato slices it.






    •  Arrange the onion rings above the tomato slices.




    •  Spread little ketchup upon it.




    •  Above that place the patties.




    •  On top of that place a slice of cheese .




    •  Place lettuce above all,if needed sprinkle a pinch pepper powder on it.




    •  Now cover the upper part using a fried bun.




    Now our Snack Chicken Hamburger is ready to eat.....

    CHICKEN STEW

    Stew is a traditional dish of South India.We prepare stews with Mutton,Chicken, Beef, Mixed Vegatable, Cauliflower, Ladies finger, Potato,Paneer, Egg.This dish is an important recipe on Chrsitmas in Kerala.The good combination for stew is Appam , Puttu etc.Here I m presenting  a very tasty Chicken stew  that tempts all of you with its mouth watering aroma. Hope all will love this!!! 

                                              INGREDIENTS

    • Chicken with bone                 -               350 gms
    • Onions sliced                         -               3
    • Green chillies slitted               -               8
    • Garlic crushed                       -                2tsp
    • Ginger Juliennne                   -                2 tbsp
    • Carrot                                    -                1
    • Potato                                    -                1
    • Star anise                              -                1
    • Cinnamon                             -                2 stick
    • Cloves                                  -                6-7
    • Salt to taste
    • Oil                                                          2 tbsp
    • Coconut oil                         -                  2 cup
    • Coriander leaves chopped  -                  as required
    To Garnish
    • Fry 1 sliced nion till golden brown 
    • Fry 3 curry leaves in oil
                                              METHOD







    •  Heat a pan and add oil and fry the " To garnish" items well.Keep aside




    •  In the same pan add star anise , cinnamon and cloves.


    •  Add  crushed garlic and saute well.

    • Add ginger juliennes and saute well.



    •  Now add the chopped onions and green chillies to it.


    •  When it gets tender add the diced veggies to it.


    •  Add pepper powder to it.


    •  Add chicken pieces to it and saute for few minutes.


    •  Add some water and cook well


    •  Add some coriander leaves to it


    •  Add coconut milk to it and boil for 5 mins in low flame.


    Garnish with fried onions and curry leaves and serve!!

    CHERRY CHAMMANTHI


                                                    CHERY CHAMMANTHI

     We all have seen,made and tasted different varieties of chammnathis/chutneys.How many of you have tasted Cherry Chammanthi/Chutney?Since cherry is sweet,everyone thinks that it can be used for cakes,Jams Squash, decoration etc only.Here I m going to prepare for you a special cherry chammandi.In order to prepare chutney using cherry, we have to first of all keep this in salt water for 1 month.This can be used as Uppu Cherry(Salted Cherry) also.With this Uppu Cherry today  we are preparing this chammanthi. This can be served with Rice, Dosa,Idli,Rice porridge etc.Everyone do try this chutney and I am sure you will all like it.

                                                     INGREDIENTS
    • Uppu Cherry                                  -    15 nos
    • Shallots                                          -    8 nos
    • Red chilly powder                         -    1/2 tsp
    • Salt                                                -     as required(little amount of salt will be enough since we                                                               use salted cherry)
    • Coconut oil                                   -     1 tbsp
                                                      METHOD



    •  This is salt cherry.Since this is not always available in market, we have to prepare in home.


    •  Remove the seeds of cherry and chop it. Chop the shallots too.


    •  Add red chilly powder to it.



    •  In a grinding bowl grind everything together.Do not make a fine paste.



    •  Taste the salt and if needed add little to it and grind again.



    •  Remove this to a bowl.


    •  Add coconut oil to it and mix well.


    • Now the tasty cherry chammanthi is ready to serve. ENJOY!!!!!
