                 CHICKEN KOFTA BALLS/ MEAT BALLS

                                                                                                                                                                                              
The dish Kofta is said to be a part of Central Asian,Southern Asian,Middle Eastern cuisines. In India Kofta will be more familiar to Northern and Central parts. Kofta can be prepared using Veg or Non Veg filling.It is usually served along with a spicy curry and is best with rice or any Indian breads.Chicken meat balls or chicken kofta balls are made with minced meat by adding masalas to it.These balls are then fried on a nonstick pan by greasing oil.

                              INGREDIENTS

  • Minced chicken meat               -  200 gms
  • Besan fried                             -  3 tbsp
  • Ginger paste                           -  1 tsp
  • Garlic paste                            -  1 tsp
  • Green chilly paste                   -   1/2 tsp
  • Red chilly powder                  -   1/2 tsp
  • Mint paste                             -   1/4 tsp
  • Garam masala powder            -    2 pinch
  • Onion powder                        -   1 tsp
  • Lemon juice                           -   1 tsp
  • Salt to taste
  • Oil or butter  to just spread on pan
                                 METHOD

  • Except besan(gram flour) and oil mix remaining ingredients well.


  • Now fry the besan till light brown color.


  • Add the besan too and knead well like chapathi dough.


  • Make small balls.


  • Spread some oil on  a non stick pan.Place all balls one by one together. Close it with a lid and every 3-4 mins turn the balls .Cook till 15-20 mins in low flame.

Tapioca is one of the favorite food items of all Kerala people.In Kerala many recipes are prepared out of tapioca.Today I am preparing a special type of ball using Tapioca and chicken and I have named it as 'Tapioca chicken balls'.So friends try out this tasty 'Tapioca chicken balls'.

                                                       INGREDIENTS

  • Boiled tapioca mashed                      -  1 cup
  • Chicken                                            -  5 to 6 pieces boneless
  • Onion chopped                                 -  3tbsp
  • Ginger paste                                     -  1/2 tsp
  • Garlic paste                                       -  1/2 tsp
  •  Green chilly paste                           -  1/2tsp
  • Pepper powder                                 -  1/4 tsp
  • Garam masala                                 -  2 pinch
  • coriander leaves                               -  as required
  • Egg                                                  -  1 beaten
  • Bread crumbs                                  -  as required
  • Salt to tatse
  • Oil

                                                  METHOD

  • Boil the chicken pieces by adding little salt and water. When it  dries crush it in a mixie.



  •  Boil the tapioca and strain the water.


  •  Smash the tapioca and make small 7 balls.


  •  Chop the onions and keep aside.


  •  Heat a pan,add some oil and splutter little mustard in it.


  •  Add ginger paste to it.


  •  Add garlic paste to it.


  •  Add green chilies to it.


  •  Saute well.


  •  Add chicken chopped to it.


  •  Add pepper powder and garam masala to it.Mix well.


  •  Make balls with smashed potatoes and make a hole inside it .



  •  Add coriander leaves to it.


  •  Fill this mixture inside the tapioca balls and roll it.



  •  Dip in beaten egg and bread crumbs.



  •  Heat the oil.


  •  Fry all the balls in oil.

CHICKEN CUTLET

Cutlets are easy to prepare and  is a very good evening snack.We all have had different types of Cutlets.Today I am going to prepare a Chicken Cutlet for all the cutlet lovers!!.This can be prepared easily when the children are back from school or when we have sudden guests etc..Now let us see the step by step preparation.

                                                   INGREDIENTS
  • Boneless Chicken cooked and crushed          -   1 cup
  • Onion finely chopped                                     -   1 medium
  • Ginger finely chopped                                    -   1 tbsp
  • Green chilies finely chopped                          -   6-8
  • Garlic  crushed                                                -   1 tsp
  • Pepper powder                                                -   1/2 tsp
  • Garam masala                                                 -   1/2 tsp
  • Curry leaves                                                    -   as required
  • Coriander leaves                                             -   as required
  • Potato mashed                                                -   1 cup
  • Egg                                                                 -   1 beaten
  • Bread crumbs
  • Salt to taste 
  • Oil
                                                   METHOD




  •  Heat a pan add little oil.Now add chopped onions and ginger to it.


  •  Saute well and add the green chilies to it.


  •  Add curry leaves too.


  •  Mix well.


  •  Add crushed garlic too and saute well.


  •  Now add the pepper powder and garam masala to it.


  •  Add boiled crushed chicken to it.


  •  Combine well.


  •  Smash the potatoes and keep it aside.


  •  Combine well .



  •  Finally add the coriander leaves and  combine well.


  •  Shape it according to your taste and keep it aside.

  • Keep aside the beaten egg and bread crumbs.Now first dip in beaten egg.

  • Then coat this with bread crumbs.For better crispiness and taste dip the piece once again in beaten egg and bread crumbs.



  •  Keep all the coated cutlets aside.


  •  Heat a kadai add oil and fry in high flame.If one side is done flip it and fry the other side too.

               BOILED TAPIOCA AND SHALLOTS CHUTNEY



Today I am preparing a very easy recipe and a common dish found in almost all the houses in Kerala.Our dish for today is Boiled tapioca and shallots chutney.The spicy chutney made from shallots is a real mouth watering chutney the best combination for boiled Tapioca.This can be served as a snack or along with meals too.Now let us start with our preparation.

                                              INGREDIENTS
  • Tapioca                      - 500 gms
      For chutney
  • Shallots                       - 1 cup
  • Green chilies               - 6
  • Salt to taste Tamarind - little
  • Coconut Oil
                                            METHOD



  •  Cook the Tapioca in a pressure cooker for 3-4 whistles.After the pressure goes, strain it and serve it on a plate.


  •  Grind the shallots, green chilies, tamarind, salt in a mixie. After grinding remove it to a bowl and add the coconut oil to it and mix it well and use.
