SQUID RINGS


I have shared Onion Ring recipe few weeks back.Today I am preparing another ring shaped snack item with Squid.The Squid Ring is a very tasty snack item.One thing while preparing the recipe is that we should not over cook squid. The crispy rings can be easily cooked and served for kids after school or to sudden guests.So let us see the preparation now..

                                                    INGREDIENTS
To marinate
  • Squid rings                   - as required (remove both bottom part and inner part then cut into                                                                    rings)
  • Pepper powder             - 1/2 tsp
  • Garlic powder              -  1/2tsp
  • Salt to taste
Mix this well and keep for 10 mins.

For coating
  • Flour                          -   1/4 cup
  • Corn Flour                 -   2 tbsp
  • Pepper powder          -   a pinch
  • Salt                            -   a pinch
  • Garlic powder           -   a pinch
Mix all the ingredients well.Add the marinated rings one by one and coat the powder. Fry this in oil for 2 mins or till it becomes brown and crispy.

MUTTON PERALAN


Mutton as we all know is the meat of domestic sheep.There are many Indian Mutton recipes Mutton Peralan is yet another popular recipes of Kerala.This dish will be one of the favorites for people who like spicy foods.This yummy spicy gravy dish can be served along with hot rice,roti,naan etc..To prepare this recipe first of all marinate the mutton with masalas and cook this in a pressure cooker for 15 mins.After that saute this with onion , ginger, garlic.Now we can see the preparation.

                                                         INGREDIENTS
To marinate the Mutton
  • Mutton                               -  500 gms
  • Turmeric powder               -  1/2 tsp
  • Red chilly powder             -  1 tsp
  • Salt to taste
  • Pepper powder                  -   1/2 tsp
  • Garam masala Powder      -   1/4 tsp
  • Ginger paste                      -   1/2 tsp
  • Garlic enhancer                 -   1/4 tsp
Mix this well and keep this aside for 30 mins.
  • Onion                                -   1 big sliced
  • Green chilies                     -   1 or 2
  • Ginger paste                      -  1/2 tsp
  • Garlic crushed                  -   1 tsp
  • Curry leaves                     -   2 sprigs
  • Tomato                             -   2 cut into pieces
  • Coriander powder            -   1 tsp
  • Red chilly powder             
  • Pepper powder             
  • Garam masala powder    -    2 pinch
  • Water                              -    1/4 cup
  • Coconut milk                 -     3/4 cup
  • Oil                       
                                                      METHOD








  • Marinate the Mutton and keep it aside.


  • After 30 mins add 1/4 cup of water and cook this in a pressure cooker for 15 mins.


  • Wait till the pressure comes down.


  • Heat a kadai and pour little oil .



  • Add the crushed garlic and saute for few seconds.


  • Add the ginger paste and saute well.



  • Add curry leaves and sliced onions to it.



  • Add green chilies and saute till the onions become light brown.


  • Now add the dry masalas one by one.First add coriander powder and red chilly powder to it.


  • Then add pepper powder to it.


  • Saute well and add the chopped tomatoes to it. Let it mix properly with the masala.Then add the cooked mutton to it.


  • Saute this for some time.


  • Add the coconut milk and masala powder to it.


  • Let the masala becomes thick, turn off the flame.



  • Finally garnish with chopped coriander leaves and a pinch of pepper powder.

AMMAYI'S SPECIAL PRAWNS ROAST


Prawns Roast is a very special recipe especially in Kerala.Today I am presenting to you all this recipe in my own style.I have named it as Ammayi's Special Prawns Roast.It is a very easy recipe to prepare too.This recipe has all the flavors in a good balance.It can be served along with Roti,Rice recipes etc.My kids love this recipe very much. .So all the foodies do try this awesome dish.Now let us see the preparation.

                     
                                                           INGREDIENTS
  • Prawns cleaned and de-veined       -  2 cups
  • Onion                                            -  1 medium finely sliced
  • Ginger paste                                   -  1 tsp
  • Garlic paste                                    -  1.5 tsp
  • Turmeric powder                           -  1/2 tsp
  • Kashmiri Red chilly powder         -  2 tbsp
  • Pepper powder                              -  1 tsp
  • Fennel powder                              -  1/4 tsp        
  • Curry leaves                                 -   2-3 sprigs
  • Coconut Oil                                  -   3 tbsp
                                                           METHOD
  • Marinate the prawns with sliced onions, ginger paste, garlic paste, turmeric powder, red chilly powder, kashmiri chilly powder, pepper powder, curry leaves.Mix this very well with your hands and keep this aside for 30 mins.

  • Heat a kadai pour coconut oil and  add the marinated prawns to this.Do no't close with lid as water will come out later.So cook this openly and stir continuously.When the masala coats well on prawns and becomes dry,sprinkle the fennel powder.Stir well,turn off the flame and serve it on a plate.

SPICY SQUID ROAST WITH VEGETABLES


Squid is widely used in different cuisines like American,Canadian,Japanese,Chinese,Turkish,Korean etc.There are many delicious recipes available in these cuisines like Calamari,Garlic Squid,Pepper Squid,Roast etc. In Kerala Squid Roast is called as  Koonthal or Kanava Roast.This is a semi  dry recipe.It is a very easy recipe to cook and takes only few minutes to cook. Make sure you do not cook squid for long time since it becomes hard.Actually I prepared today's recipe with some vegetables.So all of you do try this yummy recipe and share your opinions Now let us  see the preparation right

                                                          INGREDIENTS

To marinate
  • Squid                                            -  500 gms
  • Pepper powder                             -  1/2 tsp
  • Salt                                              -   to taste
  • Red chilly powder                      -   1 tbsp
  • Turmeric powder                        -  1/2 tsp
  • Ginger garlic paste                     -  1/2 tsp
Marinate this and keep it for 15 mins

  • Onion                                     -   1 Large sliced
  • Green chilies                          -   3
  • Garlic                                     -   8 sliced
  • Ginger paste                          -   1/2 tsp
  • Tomato                                  -  1 Large
  • Carrot                                    -  1 sliced slant wise
  • Capsicum                              -  1
  • Spring onion                         -  2 stem
  • Red chilly powder                -  1/2 tsp
  • Pepper powder                     -  1/4 tsp
  • Oil 
  • Salt                                      -   to taste
                                                  METHOD
  • Clean the squid ( remove the black skin) and cut into pieces. 


  • Add the To marinate ingredients .Mix it well and keep it aside.




  • Heat a kadai and add some oil to it.


  • Add the marinated squid and saute it for 5 mins till the masala coats on the squid.Remove this to a plate.


  • Set ready all the vegetables by side.


  • In the same pan add some oil and wait till it gets hot.


  • Add sliced  garlic to it.


  • Then add ginger paste to it.Saute for 1 min.


  • Add sliced onions to it.


  • Along with that add the sliced carrots too.


  • Saute it well till it becomes light brown.


  • Add the green chilies to it.


  • Add tomatoes to it.Saute for 1 more minute.


  • Add red chilly powder and pepper powder to it.


  • Add the spring onion stems.


  • And capsicums.Add salt now, if required add little more.


  • Finally add the squid and saute for 2 more mins in high flame.



  • Serve it and garnish.This is a very yummy side dish.
