Chicken popcorn is the most popular dish of KFC,Chicking  etc...All of you must have tasted this many times from these shops.Children usually love to have this chicken popcorn the most.Today I am giving you all a chance to prepare it in your own home.Sounds good to atleast some of you right??!!Let us see the step by step preparation below...

                                              INGREDIENTS
For marination chicken
  • Chicken breast piece(boneless) cut into cubes  - 250 gms
  • Add 2 tb sp of water to it and 1/2 tsp baking powder to it.
  • Add salt and a 1/4tsp vinegar to it
  • Add 1/3 tsp pepper powder to it.
  • Add 2 tbsp Maida/Refined flour  and 2 tbsp cornflour.
  • Mix all well and keep it aside for 4 hrs in refrigerator.
                                            METHOD
  • Crush white fresh bread into a powder.
  • Dip one  and press tightly and dip once more .
  • Do the same process again.
  • Keep this in refrigerator for 1 hr and deep fry in oil till golden brown....

Duck Peralan is an authentic and popular dish of Kerala.Duck is an unavoidable dish in Christian weddings and functions. Kuttanadan Duck is the best of all in Kerala.Today we are preparing this dish by sauting all masalas till the  masala gets properly coated on duck.This is really an awesome dish and now let us see the step by step recipe of our Duck Peralan.

                                              INGREDIENTS
  •  Duck                                  - 1.2 kg pieces
  • Onion                                 - 3 sliced
  • Ginger                                - 1 piece chopped
  • Garlic                                 - 3 tbsp chopped
  • Green chilies                     -  5
  • Coriander powder             -  3 tbsp
  • Turmeric powder              -  1/2 tsp
  • Red Chilly powder           -  1 tbsp
  • Garam masala                  -  1/2 tsp
  • Fennel powder                 -  1/4 tsp
  • Pepper powder                 -  1/4 tsp
  • Vinegar                             - 1 tbsp
  • Water
  •  Oil
                                                METHOD



  •  Chop all the vegetables and keep aside.


  •  Cut and clean the meat and keep aside.Do not remove the skin.


  •  Heat a pan  and add oil,ginger to it.


  •  Add chopped garlic to it.

  •  Add sliced onions and green chilies to it.


  •  Saute till it becomes tender.


  •  Add coriander powder to it.


  •  Add turmeric powder to it.


  •  Add garam masala to it.


  •  Add red chilly powder to it and saute well.


  •  Add pepper powder to it.


  •  Add fennel powder to it.


  •  Add duck meat and vinegar to it.


  •  Mix well and add water to it.




  •  When all the masalas gets coated in duck  we can remove from it from the flame.


               Here is your Duck Peralan ready to eat!!!!

BENGAL GRAM CURRY/ KADALA CURRY

Kadala /Bengal gram curry is considered as one of the traditional recipe in Kerala.The main combination for this curry in Kerala is the breakfast items like Puttu, Appam.This recipe is an all time favorite for all the visitors of Kerala.Let us see how to prepare this tasty recipe.

                                                       INGREDIENTS
To Cook Bengal Gram

  • Bengal Gram/Kadala                            - 1/2 kg( soak this over night min 6-8 hrs)
  • Onion Sliced                                         - 1
  • Ginger                                                   - a small piece
  • Garlic                                                    - 10 crushed
  • Green chilies                                         - 3 slitted
  • Salt to taste
  • Water level  above the soaked gram.
Cook the ingredients in a pressure cooker.After one whistle lower the flame and cook till 30 mins.When the steam comes down open it and keep this aside.

                                     

To prepare Gravy

  • Onions sliced                   - 2
  • Tomatoes                         - 2
  • Garlic crushed                 - 2 tbsp
  • Green chilies                   - 4
  • Coriander powder          - 3 tbsp
  • Red chilly powder          - 2 tsp
  • Turmeric powder            - 1/4 tsp
  • Garam masala                 - 3/4 tsp
  • Coconut milk                  - 2 cups
  • Salt
  • Oil
To Garnish 
  • Mustard seeds
  • Red chilly 
  • Curry leaves
  • Coriander leaves

                                     METHOD

  • Slice the onions ,chop the tomatoes and keep aside.

  • Heat a heavy bottom pan and add some oil to it.


  • Splutter mustard seeds and add red chillies to it.


  • Add curry leaves to it.


  • Add crushed garlic to it.



  • Add sliced onions to it.


  • Saute this while it becomes tender.


  • Add green chilies to it.


  • Soak the dry masala powder in water.


  • When the onions becomes light brown in color add this soaked masala gravy to it.


  • Now add tomatoes too. Let it saute for 5 mins in low flame.



  • Add little water from the cooked gram to it.Wait till it evaporates and the oil leaves out.


  • Add little salt again  to it.

                                     


  • Now add the cooked gram to it.


  • Mix well.


  • Add coconut milk to it.


  • Let it boil till oil appears on top.


                    Turn off the flame and garnish with coriander leaves and serve hot!!

KUTTANADAN DUCK MAPPAS IN TODDY STYLE


        KUTTANADAN  DUCK MAPPAS IN TODDY STYLE



Mappas is a traditional dish of syrian christians in Kerala.We can prepare mappas with fish, egg and all meat varities. The most familiar of them is Duck Mappas.This can be prepared in two ways one in coconut milk gravy or in coconut paste gravy.Kuttanadan Duck is the most famous duck in Kerala.Kuttanad is a place that belong to the one of the famous district in Kerala called Alleppey. This place is famous for its backwaters because of which we get huge variety of fishes,ducks.So today we are preparing a Toddy style Duck Mappas which is really famous in Alleppey region..Let us start the step by step preparation here.

                                                 INGREDIENTS
  • Duck pieces                       -  500 gms
  • Onion sliced                      -  3 medium
  • Ginger chopped                -  3 tbsp
  • Garlic chopped                 -  3 tbsp
  • Tomato                             -  1 chopped
  •  Green chilies                   -  8 slited
  • Coriander powder            -  3 tbsp
  • Red chilly powder           -  2 tbsp
  • Turmeric powder             -  1/2 tsp
  • Fennel seed powder        -  1/2 tsp
  • Garam masala powder    -  1/4 tsp
  • White pepper powder     -  1/4 tsp
  • Coconut grated               -  1/2 cup
  • Coriander leaves           -  1/2 cup (leave 1 tbsp to garnish)
  • Salt to taste
  • Water as required
  • Oil 3 tbsp       

                                      METHOD

  • Keep ready Duck,veggies and masalas.



                                     





                                      

  • Heat a kadai.


  • Add oil to it.


  •  Add chopped ginger to it.


  •  Add chopped garlic too.


  •  Saute well.


  •  Add slitted green chilies to it



  •  Add sliced onions to it.


  •  Grind the coriander leaves with coconut grated to a fine paste.


  •  Add all the dry masala powders to it.


  •  Saute well and add little water to it.


  •  Let the water evaporates.


  •  Add duck pieces and salt to it.


  •  Add chopped tomatoes too .


  •  Saute well for 5 mins.


  •  Add water to it.


  • When it is cooked well, add the coconut paste to it.


  •  Mix well and let it cook for some more mins.


  •  After 10 mins we can see oil appearing on top.

  • Garnish with coriander leaves and turn off the flame.


                     Delicious Kuttanadan Duck Mappas 
                        is now ready to serve..Enjoy!!!!!
