SPICY MUTTON BALLS


We all would have noticed Mutton Balls in the menu card of restaurants.Today let me share with you the recipe of this.This balls can be prepared with chicken or mutton too.Only few ingredients are required to prepare this recipe in your kitchen.It can be served as a starter or as an evening snack to kids.Now let us  see the preparation..

                                                        INGREDIENTS
  • Mutton pieces boneless            -  100 gms (cook this in a pressure cooker by adding 1tsp red chilly powder, 1/4 tsp pepper powder , 1/4 tsp garam masala and salt)
  • Coconut grated                         -  1/2 cup
  • Onions or Shallots                    -  3-4 pieces
  • Ginger  paste                            -  1/2 tsp
  • Garlic paste                              -  1/2 tsp
  • Green chilies                            -  2
  • Curry leaves                             -  little
  • Coriander leaves                      -  little
  • Salt                                           -  add only little since we added salt while cooking mutton
  • Bread crumbs                           -  1/2 cup

                                                        METHOD



  •  Grind the mutton ,ginger paste, garlic paste, green chiles,coconut grated, curry leaves, coriander leaves and salt together.While grinding do not add water.


  •  Add bread crumbs to the grinded mutton masala

  • Make small balls and keep it aside.


  •  Deep fry in oil till golden brown.


Garnish and Serve Hot!!

STEAMED EGG FLAN


Flan is known as an open pastry or a sponge cake. It can be prepared in different ways.I didn't use caramel here.To bring a caramel coating I made a sweet paste with egg yolk.Today's Flan recipe is one of my trial preparations and received a lot of compliments too.This is served as a dessert item.Now let us see the preparation.

                                         INGREDIENTS
  • Fowl Egg White               -  5
  • Fowl Egg Yolk                 -  5
  • Duck Egg Yolk                -  1
  • Sugar                               -  3 tbsp + 3/4 cup
  • Water                               -  3/.4 cup   
  • Cardamom powder          -  A pinch
  • Vanilla essence                 -  1 tsp
  • Milk powder                   -  1 cup
                                           METHOD
  • Beat the both egg yolks together first.                  




  •  Add 3 tbs of sugar and beat well till the sugar dissolves.Fill this in a plastic bag .


  •  Heat a kadai and add sugar to it.


  •  Add water to it and allow it to boil.



  •  Add cardamom powder to it.



  •  When the sugar syrup starts boiling, make a small opening at the end of the yolk filled bag and pour it in the boiling sugar syrup. 


  •  Let it cook till 10- 12 mins.When it is cooked turn off the flame and sprinkle little water over it and keep aside.
                            

                         
  • After 5 mins strain it and keep it aside. Keep the strained sugar syrup and keep that too aside.


  •  Beat the egg white and milk powder and cooled sugar syrup very well.Pour this in a greased bowl and steam it till it is cooked.

  • When the egg white mixture is cooked ,allow it to cool and apply the yolk mixture on the top.Then cut it into shapes and decorate according to your taste.
