CHICKEN DAMRU


Preparing the same chicken recipes again and again will be a boredom.So I planned to experiment a new chicken recipe.I have named my new chicken recipe as Chicken Damru.I have prepared this by using some sauces and then frying this in less oil . So this is not bad for our health too.My kids loved Chicken Damru Fry a lot.Everyone do give a try to this simple recipe.Now let us move to the preparation.

                                             INGREDIENTS
  • Chicken Legs                      -   2
  • Soya Sauce                         -   1 tsp dark sauce
  • Ginger garlic paste              -   1 tbsp
  • Pepper powder                    -  1 tsp
  • Garlic enhancer                  -   1/2 tsp
  • Tomato sauce                     -   1 tbsp
  • 8 to 9 sauce                       -   1 tsp
  • Chipotle sauce                  -   1.5 tbsp
  • Salt to taste
  • Kashmiri chilly powder    -  2 tsp
  • Oil to fry                        -  2 tbsp
                                        METHOD



  • Mix all the ingredients and apply it to the chicken legs and keep it to marinate for 30 mins.
  • Close and fry the chicken in less oil in a non stick pan.When one side is cooked flip it and cook the other side.Serve hot.






                          Chicken Damru is now ready to serve hot!!!

PEARL SPOT FRY IN BANANA LEAF/ KARIMEEN VAZHAYILAYIL VARUTHATHU


Pearl spot fish or Karimeen Fry in Banana Leaf is one of the traditional delicacies of Kerala.Pearl spot pollichathu in banana leaf is common seen in all top restaurants.Today's special fry in banana leaf is a delicious recipe of my DIL's mom.She is a specialist in roasting fish in banana leaf.I hope you all will try this home made Fish fry in your kitchen too.So let us see the preparation  right.I am sure once you taste this, u will crave for it again ...

                                          INGREDIENTS
  • Pearl spot fish                         -  8 nos
  • Pepper corns                           -  2 tbsp
  • Red chilly powder                   -  1 tbsp
  • Ginger                                   -   a small piece
  • Garlic                                    -   8 cloves
  • Shallots                                 -   8 nos
  • Turmeric powder                    -  1/2 tsp
  • Fennel seeds                          -  1/2 tsp
  • Salt to taste
  • Vinegar                                 -  1/2 tsp
  • Curry leaves                          -  1 sprig
  • Coconut oil                           -  2 tbsp
                                        METHOD
  • Grind all the ingredients together to a fine paste. 
  • Clean the fish, pat dry and make oblique incisions over it.


  • Apply the masala over the pat dried fish and marinate for 30 mins.
  • Gently wilt the freshly plucked banana leaf by keeping on the flame.


  • Heat the heavy bottom pan and lay this leaf on the bottom.


  • Place all the marinated fish one by one.


  • Cover this with a lid having holes.When the masala dries and the fish is cooked add the coconut oil and keep on low flame for 2-3 mins more and serve hot..

BAKED OREO CHEESE CAKE


Baked Oreo Cheese Cake is a delicious sweet dessert.Actually cheese cakes are prepared without baking.Instead of baking it is refrigerated.But here I have baked this for a change.Usually the bottom crust or base is made from crushed cookies or digestive biscuits. Now a days many varieties of cheese cake are available in different flavors like strawberry. oreo. chocolate, pumpkin etc.For birthdays also now people have started to order for Cheese Cakes.Hope you all will try my yummy recipe.Let us move to the preparation... 

               INGREDIENTS FOR PREPARING CREAM CHEESE AT HOME

  • Milk                                      -  1 litre
  • Vinegar                                 -  2 Tbsp
  • Thick curd                            -  2 tbsp
  • Thick Whipping cream         -  1/4 cup
                                                   METHOD

Boil the milk , when it starts to boil add the vinegar to it.Stir continuously, let the water and cheese separates. Remove it from the flame,pour this to a muslin cloth and drain the water. Wash this under running water  to get rid off the sour taste of vinegar.Tie it and hang it now. Let it stay for 30 mins.If the water is gone move this to a mixer and add curd to it and blend smoothly.If the curd is watery hang this again in a muslin cloth for 1 hour.Remove this to a mixer again. Then add the whipping cream and blend very smoothly to a fine paste.First refrigerate,then bring it to room temperature and use.

Here is your Home  made Cream Cheese.Cream cheese is readily available in market too.For people who prefer to buy it from markets, I would suggest you to buy Philadelphia Cream Cheese because this is the best among all cream cheese.


                                INGREDIENTS FOR OREO CHEESE CAKE
  • Cream cheese ( home made)                         -  200gm 
  • Egg                                                                -  1
  • Vanilla essence                                             -  1/2 tsp
  • Powdered sugar                                            -  1/2 cup
  • Thick curd                                                    -  1/3 cup
  • Oreo biscuit                                                  -  2 big packets
  • Maida                                                           -  2 heaped tbsp
  • Baking Soda                                                 -  2 pinch
  • Butter                                                           -  75 gm melted
  • Fresh cream                                                 -  1/4 cup
                                                   METHOD



  •  Grind 18 oreo biscuits to a fine powder.



  •  In a bowl mix this powdered biscuit with the melted butter.


  •  Take a rectangle or round baking tray and lay a parchment paper and place the biscuit mix as the bottom layer.Press this tightly and make a fine layer.Keep this aside.


  •  In a bowl add the cream cheese and egg.


  •  Add vanilla essence and beat this well.


  •  Add fresh cream and beat slowly.




  • Add powdered sugar and mix it well.



  •  Add thick curd and beat well.



  •  Crush 5 oreo biscuit in ziplock bag with a roller. 


  •  And add this to the batter.


  •  Finally sieve the flour with baking soda .


  •  Mix this flour to the batter.


  •  Layer this batter over the biscuit layer.


  •  Bake this for 45 mins at 200degree celsius.


  •  Decorate according to your wish.Here I have used chocolate ganache cream and mario biscuits.



  •  Finally sprinkle some castor sugar over it.. Please note to take a very thin siever to sprinkle the castor sugar.Here I have sprinkled using a big hole siever and that is why it has over lapped.

OYSTER PEPPER ROAST

 

OYSTERS!!!Have anyone tasted this meat..?This dish is very famous towards Malabar and almost all people have tasted this for sure. This meat is seen in sea rock and mainly seen between Kozhikode and Kannur regions.People who stay far from Malabar region would not have seen ,prepared or tasted this dish.Today I got a chance to taste this meat.To be frank I saw oyster for the first time today in my life.But today I am not the one who is preparing today's Oyster recipe.I am introducing a new cook  Mrs.Chandramathi Krishnan , my own dear Aunt.By Profession she is a teacher but at the same time she is  an amazing cook too.Today she is going to share this recipe for us.I am sure you all will love this recipe because I just loved this recipe made by her.

Oysters are delicious and can be cooked in various ways.It's a Shell meat  and is very soft and yummy.Here she has cooked this meat in a pan, evaporated the water and set it aside.After that she roasted in pepper masala. Even though this looks like a simple recipe, it tastes superb..Actually there is nothing to remove from this meat.We just  need to clean the mud from the meat and wash it 2-3 times in water.Now let us move to the preparation.

                                                 INGREDIENTS

  • Fresh cleaned Oysters       -   30 nos
  • Onions sliced                    -   1 big
  • Ginger                               -   3/4" piece crushed
  • Garlic                                -   8-10 cloves crushed 
  • Green chilies                     -   3-4 slited
  • Pepper powder                  -   1/2+1/2 tsp
  • Pepper crushed                  -   3/4 tsp
  • Turmeric powder               -   1/2 tsp
  • Tomato                              -   2 cut into pieces
  • Salt                                    -   to taste
  • Curry leaves                      -  2 sprigs
  • Coconut oil                       -   2 tbsp
  • Ghee                                 -   1 tsp
                                                METHOD



  •  Clean the Oyster meat.



  • In a pan, add the oyster meat along with 1/2 tsp of pepper powder and salt.Then cook it.Once it starts boiling water starts to come out. 

                            

  • Allow the water to dry.Keep this aside.


  •  Heat another pan, add coconut oil to it.Saute the crushed ginger and garlic till light brown.Then add the green chilies.


  •  Now add the sliced onions to it and saute in medium flame.


  •  When it becomes translucent, add the tomato pieces to it.


  •  Saute this for some time.Cover it and cook for 3-4 mins.


  • Cook till the tomatoes get cooked.


  •  Now add the cooked oysters and make it pat dry



  •  When the masalas coat over the meat, add crushed fresh pepper, curry leaves and 1 tsp ghee to it. Saute this for 2 mins more and turn off the flame .Serve it hot.
