                 HOT AND SWEET GARLIC PRAWNS




















Hot and Sweet Garlic Prawns dish is actually a pure Chinese recipe. But I have prepared this recipe with an Indian flavor. The taste of garlic and chilly are the main ingredients that add flavor to this dish. To reduce the spice, I have added little amount of tomato ketchup also to give it a bit of sweetness. So here we go with the details of preparation. All of you try this recipe.

                                          INGREDIENTS


  •           Giant prawns/Shrimps    - 500 gms ( Clean this . de-vein it. Do not remove  the                                                                   tail and  head )
  •            Turmeric powder             - 1/2 tsp
  •             Pepper powder                - 1/2 tsp
  •             Garlic                                - 1 Big Bulb, crush it finely
  •             Ginger                               - 1 piece,Julienne cut
  •             Onions                              - 1 medium finely chopped
  •             Green chillies                  - 2 finely sliced
  •             Dry Red chillies              - 12 nos . cut into pieces
  •             Pepper powder               - 1/4 tsp
  •             Tomato ketchup             - 1 tsp
  •             Salt to taste
                                      METHOD

  •  Marinate the cleaned prawns with turmeric powder salt and 1/2 tsp pepper powder.Keep this for 20 minutes.                            



  •  Heat some oil in a heavy bottom pan and add the crushed garlic, saute well.

  • When it turns to light brown color add the ginger julienns.

  •  Now add the green chillies and saute for 1 min in high flame.

  • Add the chopped onions and saute well.


  • Now add the red chillies and saute well.

                        


  •   When the onions and red chillies becomes light brown color add the prawns to it and                  stir continuously  for 3-4 mins.

                         


  • Fry the prawns till it is done.It will take 5-10 mins to cook well.


  • When it is cooked, add tomato ketchup to it and mix well.


  • When it is ready garnish with coriander leaves.( If you wish you can garnish with spring  onions also)

CHICKEN KOZHUKATTAI/KARAH KOZHUKKATAI

KOZHUKKATTAI is a popular South Indian sweet dish made from rice flour. How about preparing a non-veg spicy kozhukattai instead of sweet. Yes this thought was finally practically done.So here I present to all the Chicken Kozhukkattai/Karah Kozhukkattai.This is a traditional snack item for ramzan. We can have this even as a breakfast dish and as a snack item too.So I recommend all to try this recipe for sure..


 INGREDIENTS

To make rice dumplings

  • Fried rice powder   -3/4 cup
  • water                        - 1 cup
  • Ghee                         - 1 tsp
  • Salt to taste
To make chicken masala

  • Bonelss Chicken boiled and chopped  - 1/4 cup
  • Onions chopped                                      - 1/4 cup
  • Green chilies chopped                           -  3 nos
  • Ginger chopped                                      - 1/2 tsp
  • Garlic chopped                                       - 1 tsp
  •  Pepper powder                                      - 2 pinch
  • Coconut grated                                      - 2 Tbsp
  • Mustard seed                                         a pinch
  • Coriander leaves                                    as required
  • Salt to taste          

To prepare the rice dumplings


  • Heat 1 cup of water with little salt and a tea spoon of ghee


  • When the water starts boiling , add 3/4 cup of  fried rice powder to it. and stir well till it becomes like a ball. Allow it to cool well.Kead this to make a smooth soft ball.

To prepare masala





  • Heat a kadai and add 8-10 mustard seeds.


  • When mustard seed pops add 1 tsp of chopped ginger to it.


  • Add chopped garlic to it.


  • Now add 1/4 cup of chopped onions too.


  • Add 3 chopped green chillies and saute well.




  • When it is half done add 1/4 cup of  chopped boiled chicken.(boiled chicken pieces with 2 drops of soya sauce and little salt)


  • Add pepper powder and Saute well.



  • Add 2 Tb sp of grated coconut to it.

                                                
  • Mix well and add coriander leaves.Allow it to cool and now the filling is ready.


  • Make small dumplings and fill little masala and join all sides and make a round ball.The outer part should not be too much thin.


  • Steam this in a steamer and cook  till it is done.

                         Bhindi (okra) or ladies finger is a vegetable.It is a popular healthy food due to its high                      fibre, vitamin C,and folate content.It has a good source of calcium and pottassium.Many                        people used to eat it raw .Its helpful for brain development according to health experts.

                INGREDIENTS

  •                Bhindi                             - 150 gms
  •                Onions sliced                  - 2
  •                Green chilies                  - 3 slitted
  •                Garlic crushed                - 1 tsp
  •                Coconut milk                 - 2 cups
  •                Coriander powder          - 2 tsp
  •                Turmeric powder           - 1/2 tsp
  •                Garam masala                -1/2 tsp
  •                Red chilly powder         - 1.5 tsp
  •                Tomatoes                       -  1 sliced
  •                 Mustard seed                 - 1/2 tsp
  •                 oil 
  •                 Salt
  • Coriander leaves chopped

                                     

                METHOD

  • Heat a kadai add some oil and shallow fry the bhindi in oil. Keep it aside



                                      
  • In the same kadai pop the mustard seeds.


  • Add the sliced onions and green chilles..


  • Add the crushed garlic too.
  • Add the coriander powder and saute well.



  • Add the chilly powder and turmeric powder.Add garam masala too.


  • Now add the fried bhindi and mix well with the masla.



  • Add coconut milk and allow it to cook for some time.




  • Once the gravy thickens, switch off the flame and garnish with coriander leaves.




  • This can be serve along with rice, chappathi......
