BOMBAY TOAST / FRENCH TOAST


French Toast is an Anglo-Indian breakfast dish.It can be served as a  Snack item too.French Toast is also called as Spanish Toast,Bombay Toast,Gypsy Toast etc.It's prepared with few ingredients and takes less time to prepare too.By dipping bread slice in the coconut milk batter and toasting in the pan or in a toaster is how we prepare the Bombay Toast.So let us see the preparation now.

                                                     INGREDIENTS

  • Bread Slices                -   10 pieces
  • Thick Coconut milk    -   1.5 cup
  • Egg                              -   1
  • Sugar                           -   as required
  • Cardamom                  -   4 nos
  • Ghee                           -   For applying
                                                       METHOD






  • Blend the coconut milk,sugar, egg,and cardamom together in a mixer.


  •  Pour it to a bowl.


  •  Heat a pan and  grease some ghee over it.


  •  Cut the bread as shown here.


  •  Dip the bread slices in the coconut milk batter and place it on the pan.


  •  Apply ghee on the other side too and flip it.


  •  Now the Bombay Toast is ready to eat.

NADAN CHICKEN FRY


Chicken Fry is a tasty and favorite dish for all children especially. Nadan Chicken Fry is a very yummy recipe.The aroma and taste of coriander, red chilly,pepper  etc give this dish a real good flavor.Here we are not adding any sauce instead only masala powders are added.While frying do fry the chicken pieces in a very low flame.Let us see the step by step preparation.

                                                   INGREDIENTS
  • Chicken Pieces                 - 300 gms
  • Coriander powder            -  1 heaped tbsp
  • Red chilly powder           -  1 Tbsp
  • Turmeric powder             -  1/2 tsp
  • Pepper powder                 -  1/2 tsp
  • Garam masala powder     -  1/2 tsp
  • Fennel powder                 -  1/4 tsp
  • Ginger paste                    -   1 tsp
  • Garlic paste                     -   1 tsp
  • Salt                                 -   to taste
  • Vinegar                           -   1 Tbsp
                                                 METHOD
  • Mix all the ingredients together and marinate this for 20 mins.
  • Heat oil in a kadai and fry little by little in a very low flame till crispy.
  • Serve it on a garnished plate as per your taste.( If you like fry some curry leaves and garnish on top)

RICE AND MILK POWDER PUTTU


Puttu or Steam Rice powder is a Kerala traditional recipe.Earlier days people use to soak raw rice in water for 4 hrs , then drain and powder it in a mixer.Finally with this powder Puttu was prepared.But now a days Puttu powder is readily available in .There are two types of puttu powder mainly. One is rose coloured powder named Chemba rice powder the other one is the normal white rice powder.Chemba puttu is more tastier than white puttu.For today's recipe I have used white rice powder. To this powder I added milk powder and coconut powder.Then sprinkled water slowly and mixed it well.We can serve this along with Egg roast, Egg curry, Beef curry, Beef masala, Mutton stew, Chicken items.Now a days people have invented varity in Puttu like fish puttu, prawns puttu, chicken puttu, beef puttu etc.Now let us see the preparation.

                                                 INGREDIENTS
  • Rice powder                   -   1 cup
  • Milk Powder                  -   1/2 cup
  • Coconut grated              -   3/4 cup
  • Jeera powder                 -   a pinch
  • Salt                                -  to taste
  • Water                             -  as required
                                                 METHOD



  • Take rice powder in a bowl.


  • Add milk powder to it.


  • Add salt to it.

  • Add jeera powder to it.



  • Mix well.



  • Take 1/2 cup of milk powder in a bowl and add the grated coconut and mix it.Sprinkle little water and keep it aside. Please note that water should be added little as shown in picture.


  • Soak the rice and milk powder mixture by adding water little by little .Remove the lumps.


  • Now mix the 3/4 part of coconut mixture powder to this and mix well.

  • Keep this aside.


  • Heat a pressure cooker, in the puttu bowl add little coconut mixture first , then fill the balance with puttu mixture.Cover it and steam it for 3-5 mins.

MAALAADU/ROASTED GRAM LADDU / MAA LADOO


The festival of lights ,Diwali has come again.This festival is not only known for the lights but also for the sweets,dry fruits etc.So how about preparing a sweet dish today on the occasion of Diwali??Maalaadu or Maa Ladoo is a special occasion or a Diwali special sweet.This is made with Fried Gram ,Sugar powder and Ghee.This easy sweet recipe was shared by one of my close friends.The main thing to be noted is the accurate proportion.So friends take the correct measurements which I have mentioned in the recipe.So let us  see the preparation now...

                                                      INGREDIENTS
  • Roasted Bengal Gram                   - 1 Glass
  • Sugar                                             -  1+1/2 glass
  • Ghee                                              -  1 Cup (Heat around 1 glass of ghee.Do not add the full amount of ghee at a time.Add first 1-2 tbsp then mix that with our hands,if needed add little by little.The powder should not be oily.It should be dry as shown in picture below)
  • Cardamom                                    -  5-6
  • Cashews                                        -  2 tbsp  (not compulsory)
                                                       METHOD



  •  In a mixer bowl add the cardamom and sugar.Make a fine powder.


  •  Sieve this through a strainer .


  •  Roast the fried gram in a pan and powder that too to a fine texture.


  •  Heat the ghee in a kadai.


  •  Now mix together the roasted gram powder and sugar powder.



  •  Mix it well.

  • Remove it to  a plate.


  • First take 1/2 cup of powder in a bowl then add 1 or 2 tbsp of boiled ghee to this .Mix it well with hands.The powder should be fine after adding the ghee as shown in the pictures. Take note that the mixture should not be oily.


                  
  •  Make small balls and keep it aside for 30 mins.While making balls keep one piece of cashew inside and make the balls.After 30 mins remove it to a bowl and serve.Store this in an air tight container.
