VEGETABLE SAMOSA




Samosa  is a crispy tasty snack item.Samosa is now a days available in different types like potato samosa,onion samosa,corn samosa,non veg samosa,mixed vegetable samosa.Today we will see how to prepare a yummy Vegetable Samosa.First we cook all the vegetable, then saute it by adding masalas to it. In some other parts Samosa is prepared by adding fennel powder to it.Then fill it in the samosa patti and deep fry it.So now let us start the preparation.

                                              INGREDIENTS
  • Potato                                  -  2 cut into small pieces
  • Carrot                                  -  1 medium chopped
  • Beans                                  -  3 cut into small pieces
  • Frozen Green Peas             -  1/4 cup
  • Red chilly powder              -  1/2 tsp
  • Turmeric powder                -  1/4 tsp
  • Salt to taste
  • Ginger Garlic paste             -  1/2 tsp
  • Onions finely chopped        -  1
  • Green chilies                       -  3 finely chopped
  • Mustard seed                       -  1/4 tsp
  • Oil                                       -  for sauting and deep frying
  • Ghee                                   -   1 tsp
  • Coriander powder              -   1/2 tsp
  • Garam masala powder       -   1/4 tsp
  • Turmeric powder               -   a pinch
  • Maida                                 -  2 tbsp
  • Water                                 -  as required to make a fine paste of maida
  • Samosa patties                   -  14 nos
                                              METHOD


  •  Cut the potato into cubes ,beans and carrot  into small pieces.


  •  Add peas, chilly powder, turmeric powder and salt to it.Cook this till it is done and the water evaporates.


  •  Keep ready the onions and green chilies and set it aside.


  •  When the water evaporates and the vegetable mixture becomes dry turn off the flame and remove it to a plate. Let it cool.


  •  Heat a kadai ,add little oil and splutter the mustard seeds.


  •  Saute the chopped onions and green chilies.


  •  Add ginger garlic paste to it.


  •  Add ghee to it and saute till it becomes translucent.


  •  Add coriander powder, garam masala powder, and turmeric powder.


  •  Saute well.


  •  Add the cooked vegetables and mix well.


  •  Add salt if needed.


  •  Add chopped coriander leaves and mix well.


  •  Prepare a batter with water and maida.Keep it aside.


  •  Fold it conically and fill the masala inside it.


  •  Fold it till the end.




  •  Press it tightly and keep it aside.


  •  Heat a kadai add some oil and fry all these samosas in hot oil.


Serve it on a plate with tomato ketchup and Enjoy!!!!!

BREAD FRUIT COCO KAJU HALWA




Halwas are sweet confections served widely in different varieties.We all are familiar with the common halwas made from Carrot, Pinapple,Milk etc.Bread Fruit Coco Kaju Halwa is the one of the most tastiest halwas.I am preparing this for the first time and it came out really well.I am sure you all would have prepared curry or chips with the  Bread fruit.But today I am sharing with you all a different recipe using bread fruit.I hope you all will give a try.So watch my step by step preparation....


                                                           INGREDIENTS
  • Bread fruit                                       - 300 gm
  • Cashew powdered                           - 80 gm
  • Milk powder                                   - 20gm
  • Sugar                                              - 3/4 cup
  • Dried coconut                                 - 50 gms powdered
  • Nestle condensed milk                   - 1/2 tin
  • Ghee                                               - 3 to 4 dessert sp
  • Cardamom powder                         - 1/2 tsp


                                                       METHOD

  •  Clean the  Bread fruit and cut into pieces.Cook in a pan with some water , a pinch of salt and a pinch of turmeric powder.


  •  Powder the cashews and keep it aside.


  •  Powder the dried coconut and take 1/2 tin condensed milk.Keep them aside.


  •  When it is cooked, mash it well to avoid formation of lumps.


  •  Then add sugar to it.Let it combine well.



  •  Mash it with a masher to get a smooth paste.


  • Add dried powdered coconut and mix it well. 



  •  Add  milk powder to it and stir well.



  •  Add  condensed milk to it.


  • Add cashew powder now.


  •  Stir well.


  •  Cook well on medium flame.When it starts becoming glossy add ghee little by little to it.Stir well continuously.



  •  Add 2 drops of pineapple essence to it and stir again.


  •  When it start tightening add little ghee to it .


  • Add cardamom powder to it.


  • After some time it becomes thick and leave out from the sides.When oil starts to come out, turn off the flame and transfer the mixture to a greased tray.


  •  Remove this halwa to a greased plate.


  •  Level it with a bottom greased plate.


  • Decorate with cashews and when it cools cut into required pieces.

                          Serve it on plate and Enjoy the yummy Halwa !!!!

GREEN GRAM & CHEESE BREAD ROLL



Vegetable Bread Roll is a snack item and a Ramadan Iftar dish too.It can be prepared with different fillings.Here instead of vegetables I have used green gram masala and cheese as the filling.Green gram is rich in fiber and nutrients.This can be served hot along with sauce for children after their school.It is always better to prepare snacks for children in our own kitchen than buying from outside and giving them.Let us see the preparation method .

                                                    INGREDIENTS
  • Green gram                          - 1/2 cup soaked
  • Onions                                 - 1/2 cup chopped
  • Black pepper powder          - 1.5 tsp
  • Capsicum                            - 1/2 portion chopped
  • Coriander leaves                 - 1/4 cup chopped
  • Turmeric powder                - 1/4 tsp
  • Garlic chopped                   - 1 tbsp
  • Cheese chopped                  - 3 tbsp
  • Bread slices                        -  as required
  • Egg                                     -  2 beaten
  • Bread crumbs                     -  as required
  • Salt to taste
  • Oil for frying
For maida paste
  • Maida                            - 2 tbsp
  • Water                             - as required. 
Mix these both well and make a fine paste.
                                             METHOD

  • Cook the green gram in a bowl with some salt and keep it aside.


  •  Heat a kadai and pour some coconut oil.Add chopped onions, chopped garlic, chopped capsicum and chopped stem of coriander leaves.


  •  Saute it well and add the pepper powder to it .


  •  Now add the turmeric powder to it and saute well.


  •  Add cooked green gram to it.Combine well.Then turn off the flame .When it cools add cheese to it and mix well.If needed add salt to it.


  •  Add chopped coriander leaves to it.


  •  Combine well.


  • Take a piece of bread slice and roll it to a thin slice with a roller.Place one tbsp of green gram masala to one side of the bread.


  • Apply maida paste on the three edges.

                            




  • Roll it tightly using the fingers.



  • Arrange the rolls in a plate.

  • Beat the egg and keep this aside.





  • Dip the rolls in beaten egg.

                           

  • Roll it on the bread crumbs and press it tightly.
                           


  • Arrange the rolls in a plate to fry.

  •  Heat a kadai and add some oil.

  • Fry all the rolls till golden brown.


   Serve it on a plate and enjoy the yummy Bread rolls!!!!!!
