Let us start with a sweet breakfast dish named as sweet potato upma. This is a breakfast dish and also used as a snack too.Sweet Potato is a root vegetable which is starchy,sweet in taste.In some diet recipes, we can find sweet potato as one of the food items since it is rich in fibre. The sweetness of this potato makes this dish a favorite for children.Cook this is in pressure cooker so that it will cook easily.It's very easy to prepare.So let us move to the cooking in detail.
INGREDIENTS
- Sweet Potato - 750 gms
- Onions sliced - 200 to 250 gms
- Green chilies - 10 sliced
- Red chilly - 5 cut into pieces
- Curry leaves - 2 sprigs
- Ginger - a pinch chopped
- Garlic chopped - 1 tsp
- Turmeric powder - 1/4 tsp
- Oil - 2 tbsp
- Mustard seed - 1.4 tsp
- Bengal dal - 1/2 tsp(optional)
- Salt to taste
- Water - as required to cook the potatoes
METHOD
- Peel the seet potatoes and cut into small pieces as shown in picture.By adding turmeric powder, salt and water cook this in a pressure cooker till it becomes soft.
- After 15 mins turn off the flame and when the pressure comes down remove the water from it through a strainer.Keep this aside.
- Set ready all the vegetables ready by side.
- Heat a kadai add some oil and splutter the mustard seeds.If you like add the dal and roast it.
- Now add the curry leaves and red chilly.
- Add the sliced onions, ginger, garlic , green chilies together.
- Saute till the onions becomes translucent .
- When the onions become light brown add the cooked sweet potato to it and mash well.
