VEG DOSA & THATTU DOSA



Veg Dosa is a Pan Cake made of  fermented batter.The main ingredients used to prepare dosa are Rice and Black gram.You guys can go through my  masala dosa recipe for detailed preparation of dosa. The main food of South- Indians are Idli and Dosa.Now this is more popular all over the Indian Sub Continent. Dosa has to be served very hot with sambar, coconut chutney, Onion chutney, Tomato chutney,Chutney powder etc.Today I am going to prepare Veg Dosa and Thattil koottil dosa for all of you.These dosa can be prepared easily and is very tasty too .So all should try this for sure . Now we can move to the preparation..

                                                      INGREDIENTS

  • Dosa Batter                           -   2 cups
  • Capsicum chopped               -   1/2 cup all colors
  • Carrot chopped                     -   3 tbsp
  • Onions chopped                    -   1/4 cup
  • Green chilies choppd               -   4-5
  • Ginger                                   -   a small piece choppd
  • Beans chopped                     -   3 tbsp
  • Tomato chopped                   -  2-3 tbsp
  • Salt to taste
  • Ghee
                                                     METHOD



  •  Chop all the veggies and set aside.


  •  Heat a kadai add 2 tbsp of water to it and add the carrot first.



  •  Add the chopped beans too


  •  Cook till the water absorbs.


  •  Add green chillies and chopped ginger to it.



  •  Now add the chopped capsicum and the onions to it.


  •  Add salt and saute for 1 min more till it dries.


  •  Add chopped tomato and turn off the flame.


  •  Make little thick dosa and sprinkle some ghee on it.Add the veggies over it.If this side is cooked flip it and cook for 30 secs more.Now take out and place is on a serving dish.

  •  If we are making thick small dosa's then it is called Thattilkoottil Dosa..




SERVE HOT WITH SAMBAR AND CHUTNEY OF YOUR CHOICE !!!

SWEET POTATO UPMA


Let us start with a sweet breakfast dish named as  sweet potato upma. This is a breakfast dish and also used as a snack too.Sweet Potato is a root vegetable which is starchy,sweet in taste.In some diet recipes, we can find sweet potato as one of the food items since it is rich in fibre. The sweetness of this potato makes this dish a favorite for  children.Cook this is in pressure cooker so that it will cook easily.It's very easy to prepare.So let us move to the cooking in detail.

                                        INGREDIENTS
  • Sweet Potato                 -  750 gms
  • Onions sliced                -  200 to 250 gms
  • Green chilies                -  10 sliced
  • Red chilly                     -  5 cut into pieces
  • Curry leaves                 -  2 sprigs
  • Ginger                          -  a pinch chopped
  • Garlic  chopped            - 1 tsp
  • Turmeric powder          - 1/4 tsp
  • Oil                                -  2 tbsp
  • Mustard seed                -  1.4 tsp
  • Bengal dal                    -  1/2 tsp(optional)
  • Salt to taste
  • Water                           -  as required to cook the potatoes
                                    METHOD



  •  Peel the seet potatoes and cut into small pieces as shown in picture.By adding turmeric powder, salt and water cook this in a pressure cooker till it becomes soft.


  •  After 15 mins turn off the flame and when the pressure comes down remove the water from it through a strainer.Keep this aside.


  •  Set ready all the vegetables ready by side.


  •  Heat a kadai add some oil and splutter the mustard seeds.If you like add the dal and roast it.


  •  Now add the curry leaves and red chilly.


  •  Add the sliced onions, ginger, garlic , green chilies together.



  •  Saute till the onions becomes translucent .

  • When the onions become light brown add the cooked sweet potato to it and mash well.

MASALA IDLI- A Healthy Breakfast


We all are familiar with Masala Dosa..But has anyone tried the Masala Idli?I made this as a trial recipe and it came out very well.This is a healthy breakfast recipe which you can prepare easily.I am not writing the recipe of masala today since I have already shared  the Masala recipe before. So please check my masala dosa recipe you can find out my masala recipe there. Let us move to the preparation now..

                                                                 INGREDIENTS
  • Idli Rice                                                 -  1+1/2 cup
  • Raw rice                                                 -  1 cup
  • Cooked rice                                            -  1+1/2 cup
  • Urad/Black gram ball (not splitted)    -  1 cup
  • Fenugreek                                              -  1 tsp
  • Ghee or oil                                             -  for greasing
  • Salt                                                         -  to taste
  • Water                                                     -   as required
                                                                     METHOD
  • Wash  Idli rice, fenugreek and raw rice together in a vessel.Keep this aside
  • Wash Urad balls  and keep this aside.
  • Soak  this for about 12 hrs.
  • Grind the urad balls first by adding little water to it in a mixer . The water level should be just below the urad level.The mixture looks fluffy.Remove this to a big bowl.
  • Next grind the rice together.Take out 1cup of this mixture and keep it aside.Then add the balance rice mixture to the urad mixture.
  • Finally add the cooked rice, salt and the 1 cup rice mixture together and  blend this to a fine paste.Mix all together  well. 
  • Allow it to ferment for 8 hrs . 
To be noted: Grind the rice and urad by adding the same soaked water itself.




  •  After 8 hrs the mixture will arise upto the top of the bowl.Stir this well with a spoon.


  •  Grease the idli moulds with ghee or oil.



  •  Pour half portion of batter to this mould.



  •  Then take a spoon of masala and place it on the center.



  •  Cover the masala by pouring batter over it.



  •  Steam this in a steamer.


  • Sprinkle little water over it and allow it to stay for 3 mins.After 3 mins take out the idlis .

BANANA BISCUIT /CUSTARD BISCUIT



Banana Biscuit or Custard Biscuit is one of the best snack items.Most of the kids would be very familiar with this biscuits and this is available in markets since 20 plus years.Even my kids are very fond of this Banana biscuits.I was trying to prepare this recipe for the past many years.Now I finally found out the correct ingredient proportions. I am so happy that finally I made it possible.So let me share this long time awaited recipe to all my friends.Let us see the recipe preparation..

                                                 INGREDIENTS
  • All purpose Flour / Maida  - 250 grams
  • Custard powder                 -  125 grams
  • Milk powder                      -  50 grams
  • Icing sugar                         -  175 gms
  • Butter/Margarine               -  250 gms( If you are using margarine or butter bring it to room                                                                     temperature )
  • Egg                                    -  1
  • Baking powder                 -   6 grams
  • Pineapple essence             -  1 tsp
                                            METHOD



  • Take the measured maida, custard powder, baking powder and keep aside.


  • Then add the milk powder to it and sieve this 2-3 times.


  • Cream the fat and icing sugar in a bowl.




  • Add egg and essence to it.


  • Beat it well.


  • Then add the flour to it and mix this with your hands.Knead it well and make a soft dough.Roll it into balls and shape it as per your taste.Arrange them in a greased tray cover it with an aluminium foil and bake it at 180 degree for 20 mins.


  • After 20 mins take it out and  keep this in the tray itself till it becomes cool and crispy .

BOMBAY TOAST / FRENCH TOAST


French Toast is an Anglo-Indian breakfast dish.It can be served as a  Snack item too.French Toast is also called as Spanish Toast,Bombay Toast,Gypsy Toast etc.It's prepared with few ingredients and takes less time to prepare too.By dipping bread slice in the coconut milk batter and toasting in the pan or in a toaster is how we prepare the Bombay Toast.So let us see the preparation now.

                                                     INGREDIENTS

  • Bread Slices                -   10 pieces
  • Thick Coconut milk    -   1.5 cup
  • Egg                              -   1
  • Sugar                           -   as required
  • Cardamom                  -   4 nos
  • Ghee                           -   For applying
                                                       METHOD






  • Blend the coconut milk,sugar, egg,and cardamom together in a mixer.


  •  Pour it to a bowl.


  •  Heat a pan and  grease some ghee over it.


  •  Cut the bread as shown here.


  •  Dip the bread slices in the coconut milk batter and place it on the pan.


  •  Apply ghee on the other side too and flip it.


  •  Now the Bombay Toast is ready to eat.
