SMALL ANCHOVIES IN CRUSHED COCONUT STIR FRY / SOOJI KOZHUVA PEERA PATTICHATHU



Small Anchivies is a type of small fish which have very good calcium content.This anchovies are seen in fresh water.One speciality of this fish is that its bones are very small and flexible so we can consume the bones too.We can prepare a number tasty recipes with this small fish such as fry,pickle, gracy type etc.Now let us see the preparation....

                                                       INGREDIENTS
  • Small Anchivis                          -  500gms
  • Coconut grated                          -  1.5 cup
  • Green chilies                             -  5 
  • Shallots                                     -  15
  • Ginger                                       -  1
  • Curry leaves                              -  2 sprigs
  • Coconut oil                               -  1.5 tbsp
  • Turmeric powder                      -  1/2 tsp
  • Salt to taste
  • Water                                        -  3 tbsp
  • Cambogia soaked in water       -  4 piece
                                                        METHOD



  • Crush the green chilies, shallots and ginger in a hand motor. Keep this aside.
  • Coarsely grind the coconut with turmeric powder.


  •  Clean the fish and keep it aside.


  •  In a kadai add the fish , then add the coarsely grind coconut and water.Then add hand crushed shallots, ginger, green chilies and some salt.Mix this well with your hands.


  •  Add coconut oil and curry leaves and cook it in a very low flame. 15 mins will be more than enough for cooking .If water is there dry it by switching to high flame


Serve it and enjoy this awesome dish with rice chapati etc!!

KAJU COCONUT PEDA




Today I have planned to prepare a Sweet.I searched my kitchen cabinet and I got some cashews from there.Then I thought why dont I try some sweet made of cashew?But just cashew alone I did not want to prepare, so I added some coconut too in that.The final product was an awesome sweet dish.So here I am sharing with you all another new recipe for the day.It is definitely a yummy Sweet.Let us see the preparation now....

                                                INGREDIENTS
  • Milk                                      -  1/2 litre
  • Cashews                               -  1/2 cup
  • Coconut grated                     -  2 cups
  • Sugar                                    -  1.5 cup
  • Badam essence with color   -  3-4 drops
  • Ghee                                    -  1 tbsp
  • Cashews to decorate
                                                  METHOD



  •  Take a heavy bottom pan,add 1 tbsp of ghee to it and pour the milk on it.Let it boil.



  •  In a mixer add the grated coconut and cashews.Add little water and blend it to a fine smooth paste.


  •  This is the blended mixture.


  •  When the milk starts boiling add this coconut cashew paste to it and stir well.



  •  When the mixture started boiling add sugar to it.Cook this in medium flame for 1 hr.


  •  When it start thickening add badam essence to it.Keep stirring well. 



  •  When the mixture gets thickened like this, take little with a spoon and roll it with hands.If it does not stick and gets rolled easily ,it is ready to remove to a plate.


  • Grease a plate with ghee and pour this mixture to this plate suddenly.After 20 -30 mins grease our hands and make balls of it and decorate it and serve.

CHEDDAR CHICKEN IN TOMATO PUREE




Everyone loves to have cheese.Consuming a decent amount of cheese is always beneficial to our body.Today I am using Cheddar cheese , the popular one in US and UK.This cheese has many health benefits since it contains many essential nutrients, proteins and calcium.In this recipe, I have sliced the chicken breast first.Then shallow fried the pieces, sauteed in cheese and tomato gravy.This is a dry recipe and can be used as a side dish or as a starter.Let us see the presentation now.

                                            INGREDIENTS
  • Chicken breast                         -  1 side of the chicken
  • Egg                                          -  1
  • Bread crumbs                          -  as required
  • Maida                                      -  4 tbsp
  • Salt to taste
  • Garlic powder                         -  1/2 tsp
  • Pepper powder                        -  1/2 tsp
  • Onion chopped                        - 1/4 cup
  • Garlic paste                             - 1/2 tsp
  • Ginger paste                            - 1/2 tsp
  • Red chilly powder                  - 1/2 tsp
  • Pepper powder                       - 2 pinch
  • Capsicum sliced                     - 2 tbsp
  • Green chilies chopped           -  3 
  • Cheddar cheese                     -  1/2 cup grated
  • Coriander leaves chopped    -   3 tbsp
  • Vinegar                                 -  1/2 tsp
  • Oil to fry
                                             METHOD



  • Slice the breast pieces very thinly.
  •  In a bowl take some water and mix some salt .Then dip the chicken slices in it and keep it for 20 mins.After 20 mins squeeze the water and keep it aside.


  •  Add garlic powder to it.


  •  Add pepper powder and salt to it.Mix well.


  •  Beat the egg and keep it aside.



  •  Dip the chicken slices in maida and keep it aside.



  •  Then dip it in egg and coat it with bread crumbs.


  •  Dip everything and keep it on a plate.


  •  Heat some oil in a pan.


  •  Fry the chicken slices in very low flame.



  •  After frying chicken sprinkle some grated cheese over it.


  •  Heat a kadai and add some oil.Saute the chopped onions well.


  •  When it becomes light brown add ginger paste to it.


  •  Add garlic paste too and saute well.


  •  Add chopped green chilies and saute for a minute.


  •  Add capsicum also.


  •  Now add red chilly powder to it.


  •  Then  add pepper powder to it.Saute well.


  •  Blend the tomatoes and add this .



  •  When the oil oozes out the sides add salt too.


  •  Add the balance grated cheese to it.


  •  Then chopped coriander leaves  mix well.


  •  Now  add the fried chicken pieces and mix well.Let the gravy gets coated on the chicken.Then turn off the flame.


Serve it on a plate and enjoy the delicious Cheddar Chicken!!!!

RICE FLAKES VILAYICHATHU/AVAL VILAYICHATHU




Rice flakes/Poha or Avil Vilayichathu is a tea time snack.Rice Flakes are of two types.Brown rice Flake and White rice flake.Now a days thick and thin type is also available in market.I used here Brown rice flake but can use as per your choice.This can be stored in a tight container for 2-3 weeks.The real combination of eating rice flakes vilayichathu is with ripen plantain.I m sure all will love this sweet version of Rice Flake ..Let us see the preparation right..?

                                                  INGREDIENTS
  • Rice flakes/Poha                  - 250 gms
  • Grated coconut                    - 1.5 cup
  • Jaggery                                - 250 gms
  • Ghee                                    - 2-3 tbsp
  • Cardamom powder             - 1/2 tsp
  • Green gram dal                   - 2 tbsp
  • Water                                 -  1/2 cup
                                                 METHOD



  • Heat a heavy bottom pan .Add  water and jaggery( crush it and add to the water).


  •  Allow it to dissolve. When it is in a double string form add the grated coconut  and cook for some time. Then it becomes little loose by adding coconut .


  •  If it becomes a single string form add the rice flakes to it and mix well.


  •  It will look like in the above picture.


  •  Heat a small pan add ghee and green gram dal to it.


  •  If it becomes light brown pour this to the cooked rice flakes.


  •  Mix it well.

  • Now it's ready to eat.
