MUTTON SOUP



Soup is always a healthy recipe to have.People consume it when they have sore throat,cold etc.People love Monsoon season but at the same during this season all suffer from one or the other issues in health.In Kerala during this season people consume Karkkidaka kanji(Porridge), Soups etc.So today I am planning to share this starter dish Mutton Soup which is really healthy and tasty at the same time.Let us see the preparation now.

                                                           INGREDIENTS

  • Mutton bones                              - 250 gms
  • Shallots                                       -  1 cup
  • Garlic                                          -  1 bulb
  • Ginger                                         -  1.5 piece
  • Green chilly                                -  2
  • Pepper powder                            -  1.5 tsp
  • Salt to taste
  • Water                                          - 4 cups
To garnish
  • Ghee                                             -  1 tsp
  • Shallots                                        -   2 sliced
  • Pepper powder                             -  a pinch
                                                            METHOD
  • In an earthen pot add the chopped mutton bones, chopped green chillies, chopped shallots ,chopped garlic. chopped ginger, salt, pepper powder and water.When it starts boiling reduce the flame and boil this for 1 1/2 hr or till the soup reduced to 1 1/2 cup.(You can cook this in pressure cooker also. steam for 45 mins and when the pressure comes down and water is more than 1 1/2 cup, we have to keep on flame till it reduces)
  • Heat a pan add ghee and add the sliced shallots and saute till brown, then add the pepper powder to it .Serve hot.

CREAMY CHEESE CHICKEN ROLL



Bread roll is an evening snack item as well as an Iftar item.We can prepare bread rolls with different fillings according to our taste..This is a quick recipe and is a good party snack too.Today I am preparing a creamy type filling for the bread roll. For this I have added cheese to chicken masala that gives more taste to roll.So let us see the preparation now.

                                                         INGREDIENTS
  • Bread                                             -  2 loaf
  • Chicken                                         -  500 gms 
  • Onions                                           -  3
  • Green chilies                                 -  10
  • Ginger paste                                  -  1.5 tbsp
  • Garlic  paste                                  -  1.5 tbsp
  • Capsicum                                      -  1
  • Pepper powder                             -   1 tbsp
  • Salt                                               -   little(because we are adding cheese to it and cheese is                                                                   already having salt content
  • Cheese slice (cream cheese)       -  5 slices
  • Coriander leaves chopped          -  as required
For maida batter
  • Mix 3 tbsp of maida and same amount of water.Now make a batter.
  • Take 5 eggs. beat it and keep it aside.
  • Bread crumbs as required
                                                        METHOD
  • Chop the onions, ginger, garlic green chilies and keep it aside.
  • Cook the chicken with salt and little pepper powder.When the watre drains off crush it on a chopper and keep it aside.
  • Chop the capsicum and keep it aside.
  • Cut cheese slice to pieces and keep it aside. 


  •  Heat a kadai pour little oil and add the chopped vegetables together.Saute till it becomes translucent.



  •  Add pepper powder to this and saute well.


  •  Add the chopped chicken and  stir well.


  • Add the chopped capsicum and mix well.No need to cook it.


  •  Now add the cheese and stir well. Now the masala will become in a creamy form.


  •  Turn off the flame and add coriander leaves.If required add salt to it.



  •  Roll the bread with a roller  to a thin slice.



  •  Fill the filling inside the rolled bread and apply batter on three sides.Now roll it and press the edges tightly.



  •  Dip it in the beaten egg .


  •  Coat it with the bread crumbs and fry it.

ROASTED MASALA FISH CURRY




Kerala is famous for the amazing mouthwatering Fish recipes.Fishes are available in plenty here because of which innumerable varieties of fish recipes are also available.Today's Roasted Masala Fish curry is my Grandma's special recipe.She used to roast all dry masalas and grind it. But I have used today powdered masala.Then I have roasted it without oil and soaked it in water.This dish be used for 2-3 days and is just perfect along with rice, tapioca,etc.Let us see the preparation..

                                          INGREDIENTS

  • Fish                                   -   500 gm( any fleshy fish can be used. I have used Tuna)
  • Shallots                             -   1/2 cup cut into pieces
  • Ginger                              -   1 tbsp cut into pieces
  • Garlic paste                      -   1 tsp
  • Green chilies                   -    2 slitted
  • Cambogia                        -    3 to 4 piece
  • Mustard seed                   -    1/2 tsp
  • Water
  • Salt
  • Soaked roasted masala
  • Oil
For roasting masala
  • Coriander powder         -  3 tbsp
  • Red chilly powder        -  2 tbsp
  • Turmeric powder          -   1/2 tsp
  • Mustard  powder          -   2 pinch
  • Fenugrek powder         -  1/4 tsp
                                                               METHOD



  • Clean the fish and keep it aside.Wash the fish with salt and vinegar to remove the bad smell.

                            


  • Heat a kadai and add coriander powder to it.


  • Add red chilly powder to it.


  • Roast it well and add turmeric powder to it.

                            

  • Add mustard powder to it.


  • Add fenugrek powder and stir well till it gets roasted.Add some water and mix well to make a ball.


  • Add oil and splutter the mustard seeds.


  • Then cut ginger and add to it.Saute well.


  • Add garlic paste to it.


  • Add the shallots.



  • Add green chilies and saute well.


  • Add cambogia and saute for a few minutes or till it becomes tender.


  • Add the soaked masala and saute well.


  • Add little water and stir well.Let the water evaporates and the oil leaves out from the sides.


  • Then add salt and water to it.



  • Add curry leaves to it and allow it to boil.

  • When the gravy boils add the fish and cook for 20-30 mins in a low flame. When the gravy thickens and fish gets cooked turn off the flame.

PEPPER BEEF FRY


Pepper Beef Roast is an authentic Kerala spicy recipe.It is a dry type recipe and is served as a side dish. Pepper powder and Coriander powder are the main ingredients that I have used here.Now a days doctors recommend to use pepper more than red chilly since it has antibacterial properties.It is rich in vitamin K, vitamin C,potassium and dietary fiber too.So now a days I have started using pepper more in my home.Now let us see the preparation.....

                                                INGREDIENTS

  • Beef  chopped                               - 500 gms
  • Ginger paste                                  - 1 tsp
  • Garlic paste                                   - 1 tsp
  • Pepper powder                              - 1 tsp
  • Turmeric powder                          -  1/2 tsp
  • Salt  to taste
  • Vinegar                                         - 1 tbsp
  • Onion sliced                                 -  3 nos
  • Ginger paste for sauteing             -  1 tbsp
  • Garlic paste for sauteing              -  1 tbsp
  • Coriander powder                        -  2 tsp
  • Pepper powder                             -  2 tsp
  • Turmeric powder                         -  1/2 tsp
  • Garam masala                              -  1/2 tsp
  • Capsicum diced                           -  1/2 part of a capsicum
  • Coriander leaves                          -  as required
  • Oil
                                              METHOD




  • In a pressure cooker add the cleaned beef, 1 tsp garlic paste , 1 tsp ginger paste,1/2 tsp turmeric powder, 1 tsp pepper powder, vinegar ,salt and mix it well. Steam this for 15 mins after a high whistle.After 15 mins turn off the flame and allow the pressure to come down.If there is plenty of water , allow it to dry under flame.



  • Heat a kadai and add some oil.When it becomes hot add the sliced onions to it. 



  • Add ginger paste and garlic paste to it.


  • Saute it till it becomes light brown.


  • Add coriander powder to it.


  • Then add pepper powder and saute it well. 


  • Now add the turmeric powder and mix it.


  • Add garam masala and combine well.


  • Add the diced capsicum to it.


  • And add the cooked beef to it and saute for some time.


  • Let the masala coats the meat.


  • Add salt if required.

  • Cook till it turns to a brown color.Now it is ready to serve. Garnish with coriander leaves and serve hot along with hot rice or chappati.
