       GOLD CUCUMBER PACHADI/ VELLARIKKA PACHADI



 Cucumber belongs to gourd family and is used for different uses.There are many cucumbers available in different shapes and colors.Today we are preparing side dish famous in Kerala and is prepared using gold cucumber.In kerala we call it Kani vellarikka.Here the curd we use is milky mist thick one.So the our dish 'Pachadi' will not be much watery. Pachadi can be prepared with many other vegetables too.We will now see how to prepare a Gold cucumber Pachadi.

                                                          INGREDIENTS

  • Gold cucumber                          - 500 gm
  • Onion Chopped                         - 1 medium
  • Green chilies chopped               - 3 to 4
  • Curd milky mist                        - 1.5 cups
  • Coconut grated                          - 1 cup
  • Jeera                                          - 1/4 tsp
  • Mustard powder                        - 1/4 tsp
  • Shallots                                      - 5
  • Ginger                                       - a small piece
  • Curry leaves to grind and to fry 
  • Oil
  •  Red chilly                                - 3
  • Salt to taste

                                                            METHOD


  •  Peel the skin and remove the seeds inside to it and cut into small pieces.


  •  Add all the veggies ,little salt,water and cook till it is done.


  •  Grind  shallots, coconut, ginger, mustard seed,jeera, curry leaves with curd. Do not add water while grinding add only curd.



  •  Add this masala to the cooked cucumber.




  •  Mix well and garnish it.


Our Kerala special Cucumber Pachadi is now ready to serve!!

CAULI 65 DRY

 Cauli flower dry manchurian is a good snack and a side dish too.It is a very simple dish to prepare. Just marinate it for 30 mins before frying.To clean the cauli flower,firstly take out all the florets and keep aside.Boil some water by adding little salt and turmeric powder.Once it is boiled switch off the flame and keep all the florets into it for 10 - 15 mins and drain it.

                                                                 INGREDIENTS

  • Cauli florets                                          - 300 gm
  • Ginger garlic paste                               - 1 tsp
  • Maida                                                   - 3 tbsp
  • Cornflour                                             - 3 tbsp
  •  Salt to taste 
  •  Asafoetida powder                             -  1/4 tsp
  • Red chilly powder                              -  1tsp
                                                                METHOD

  • Mix all ingredients together and marinate for 30 mins.

.






  •  Heat some oil in a pan and fry all till it becomes crispy.


Serve this with lemon slice and garnish with coriander leaves..

VEGETABLE RICE

We all know fried rice and biriyani etc.But today I am preparing just a simple easy Vegetable Rice.This is a mixed vegetable rice and I have used some spices.Let us see how to prepare this yummy Mixed Vegetable Rice..

                                            INGREDIENTS
  •   Rice                              - 2.5 cups soak in water for 40 mins
  • Beans                             -  300 gm
  • Carrot                            -  250 gm
  •  Cabbage                       -  150 gm
  • capsicum                       -  1/2 cup together.
  • Star anise                      -  1
  • Cinnamon                     -  3
  • Cloves                          -  6
  • Pepper powder             -  1/2 tsp full.
  • Water                           -   5 cups
  • Garlic bulb                  -  2 crush it no need to leave the skin
  • Green chilly paste       -   2 tbsp
  • Ginger paste                -  1 tsp
  • Garlic paste                 -  1/2 tsp
  • Tomato ketchup          -  1 tbsp
  • Celery and Spring onion as required
                                           METHOD



  •  Chop all the veggies and keep aside.


  •  Drain the soaked rice and keep that too aside.


  •  Take a heavy bottom pan and heat it.


  •  Add oil to it.


  •  Firstly add the crushed 2 full bulb garlic and fry till golden brown.


  •  Remove that from this pan and add ginger to it.


  •  Add garlic paste too and saute well.


  •  Add green chilly paste too.


  •  Saute well.


  •  Now add veggies one by one. First add the beans.


  •  Next add the carrots.


  •  Saute this for 3 mins in high flame.


  •  Add cabbage and saute it.


  •  Finally add the capsicum and sate well for 2-3 mins .


  •  Add salt to it.


  •  Add tomato ketchup to it and mix well.


  •  Now add the drained rice to it and saute well.



  •  Boil water by adding salt and dry garam masalas.Let it boil for 2 mins.



  •  Add pepper powder to it.


  •  Wait till the water boils.


  •  When it boils add the water through a strainer and remove the masala.


  •  Close it with a tight lid and allow it to cook.


  •  You can see the whole water is drained off.



  •  Mix properly.


  •  Add celery and spring onion.


Serve this on a dish and enjoy with Paneer mixed Veg,  Butter masala or Cauli dry 65!!

Today we are preparing a dish which has many health benefits.My grandmother used to try out new recipes of her own.One of my favorites among her dishes is Drumstick gravy recipe.This is really a delicious dish.The dish is prepared by boiling in shallots and coconut  milk. Friends try my Grandmother's recipe.....

                                                    INGREDIENTS

  • Drumctick                                  -   4 cut into finger length pieces
  • Shallots crushed                        -   1/2 cup
  • Garlic crushed                           -   1 tsp
  • Green chilies slited                  -   3
  • Turmeric powder                      -   1/2 tsp
  • Red chilly powder                    -   1 tsp
  • Coconut milk  2nd                    -   1.5 cup
  • Coconut milk 1st                      -   1/2 cup
  • Oil                                            -    3 tbsp
  • Mustard seed  few
  • Curry leaves
                                                    METHOD



  •  Keep ready drumsticks,crushed shallots,chilly and crushed garlic beside.


  •  Heat a kadai add some oil to it and splutter mustard seeds.


  •  Add curry leaves to it.


  •  Then add the crushed garlic to it and saute for a min.


  •  Add the crushed shallots and green chilies to it and saute till it becomes tender.


  •  Add salt to it.


  •  Now add turmeric powder and red chilly powder to it.


  •  Add the 2nd coconut milk to it.


  •  Add drumstick too and allow to cook.


  •  Close it with a lid and cook for 20 mins in low flame . Let it gets thicker.


  • Now add the 1st milk.Mix well and now its ready to serve.
