GRAPE AND MILK PUDDING



After a heavy dinner or lunch we all tempt to have a sweet dish like a pudding ,ice cream,pastries,chocolates etc.Puddings are of different flavors and tastes.Today I am preparing for you all a twin layer dessert.This is a grape and milk pudding which I have prepared in different layers.One is little sour and the other is very sweet.Let us move to the preparation straight...

                                                  INGREDIENTS
  • Seedless grapes                     -  450 gms
  • Milk                                        -   500 ml
  • China Grass                           -   15gms ( 1+1/2 packet)
  • Sugar                                      -   3/4 +3/4 cup each
  • Water                                     -   1 cup + 1 cup
  • Vanilla Essence                    -    3/4 tsp
  • Tonovine essence                 -    1/2 tsp 
  • Milk Powder                         -    1/2 cup  
                                                   METHOD



  • Wash the grapes in tamarind and salt water thoroughly.


  • Cook the grapes by adding 1 cup of water for 5 mins.After 5 mins turn off the flame and allow it to cool.


  • Once it is cool, blend this in a mixer and strain it in a strainer.Keep this aside.
                               



  • Now boil the blended grapes in a pan. When it starts to boil, add the strained china grass to it and turn off the flame.Let it cool.Add tonovine essence and mix well.



    • When it cools blend this again in a blender and pour this in a mould. Keep this in refrigerator to set for 15 mins in the freezer


    • Add 3/4 cup of sugar to milk and boil it.





    • Cut the china grass into small pieces and soak this by adding 1 cup of water for 30 mins.



      • In another stove , melt the china grass .


      • Mix the milk powder with some warm water and keep it aside.


      • Add the milk powder mixture to the milk and mix well.When the milk starts to boil, add half portion of the melted china grass to this.

      • Do note that while adding the melted china grass please strain this through a strainer.


      • When the milk mixture becomes thick remove from flame and allow it to cool.Add vanilla essence and mix well.Let it cool.



    • When the grape pudding sets well, blend the milk mixture and pour this over the grape mixture.Keep that too in the refrigerator to set.

      PRAWNS MASALA DOSA



      Sundays are meant to prepare something special for our family.Though it is the only day to rest we do consider it as a day to try out our new experiments on daily recipes.So today let us try out something different in the breakfast menu. Masala Dosa is the all time favorite for South Indians.Today I have made a special variety of  Dosa. Prawns are also a favorite one for all the non-veg fans too. So I today I prepared a combination of Prawns and Veg  Masala as the filling.Trust me the taste is amazing...So all of you should try this awesome Prawns Masala Dosa. Let us move to the preparation now.

                                                         INGREDIENTS
      • Dosa Batter                               -   For this recipe do revisit my Idli recipe .
      • Prawns Cooked                         -   1/3 cup
      • Potato boiled                            -    2
      • Ginger chopped                        -   1/2 tbsp
      • Green chilies chopped            -    2.5 tbsp
      • Onions sliced                           -   2
      • Turmeric powder                     -   1/2 tsp
      • Red chilly crushed                  -   1/2 tsp
      • Salt                                           -   to taste
      • Asafoetida                               -   2 pinches
      • Lime juice                              -   1/2 tsp
      • Oil                                           -   1.5 tbsp
      • Curry leaves                           -   1 sprig
      • Coriander leaves chopped    -   1 tbsp
      • Mustard seed                         -   1/2 tsp
      • Split Bengal gram                -   1/2 tsp
      • Dry red chilly                       -   2 cut into pieces
      • Ghee                                     -   as required
                                                         METHOD


      • Set aside all the veggies.
                                 



      •  Cook 3/4 cup of raw prawns with little turmeric powder and salt.When the water dries up. turn off the flame and set aside.After cooking we will have 1/3 cup of cooked Prawns.


      •  Heat a kadai and splutter mustard seed and split black gram .


      •  Fry the red chilly and curry leaves. Next add the sliced onions,chopped ginger and green chilies to it.


      •  Saute it till it becomes translucent.Add little salt now.


      •  Add the crushed red chilly to it. Saute well.


      •  Next add turmeric powder to it.Mix well.


      •  Add the mashed potato and salt  to it.


      • Add the cooked prawns to it.



      •  Finally add the coriander leaves, asafoetida , lime juice and salt to it . Mix well.Set this aside.


      •  Make flat thin Dosa.



      •  Apply some ghee over it and keep some Prawns and Veg Masala on one side.


      •  When the dosa is cooked ,fold it and remove it to a plate.


                                  Serve today's special Dosa along with Coconut Chutney.....ENJOY!!!!!!!!!!!

      CHICKEN SAUSAGE STIR FRY


      Chicken Sausage Stir Fry is one of the best recipes.This is one of my personal favorite too and I am sure you all will love this.Today's recipe can be served as a starter or as a bun filling.Here I sauteed all the sauces together and prepared a dry fry.It is really awesome to have as a starter dish.Now let us move to the preparation...

                                                             INGREDIENTS

      • Chicken sausage  long                -  8 cut into 2 and make some gashes over it.
      • Soya sauce                                  -  1 tsp
      • Tomato sauce                              -  2 tsp
      • Green chilly sauce                      -  1 tsp
      • Pepper powder                            -  1/4 to 1/2 tsp
      • Garlic powder                             -  1/4 tsp
      • Butter                                          -  1 tsp
                                                       METHOD



      • Heat a non stick pan and add butter to it.When it warms, add the washed chicken sausages to it.Let the water content gets absorbed.


      • When the water dries up add soya sauce and pepper to it.


      • Add tomato sauce, green chilly sauce and garlic powder to it.


      • Let the sauce coats on the sausages and becomes dry.Saute it well till it is fried .

      NAADAN PRAWNS ROAST


      After a short period I am back again with another mouth watering recipe. The Naadan Prawns Roast is a Vypin style recipe.Vypin is a place in Kerala which is famous for backwaters.I learnt this recipe from my sister  in law who is from Vypin.This place is well known for the amzing and tasty fish recipes. Today I thought to share this awesome recipe with you all too...So let us start with the preparation now...

                                                   INGREDIENTS
      • Prawns                                 -  1.5 cups cleaned
      • Chopped onion                    -  3/4 cup
      • Green chilly  chopped         -  4 
      • Ginger chopped                   -  1 tbsp
      • Coconut chopped                -  4 tbsp
      • Turmeric powder                -  1/2 + 1/2 tsp
      • Salt to taste
      • Kashmiri chilly powder      -   1 tbsp
      • Shallots crushed                  -   2 tbsp
      • Coconut oil                         -   2 tbsp
      • Water                                  -   1/2 cup
      • Curry leaves                       -   2 sprigs
      • Coriander leaves chopped  -   to garnish
                                                    METHOD



      • Wash the cleaned prawns and keep it aside.


      • Chop the onions , ginger and green chilies .Keep that aside.

                                  
      • Keep aside coconut  slices also.


      • In a clean earthen pot, add the cleaned prawns,and green chilies to it.


      • Next add chopped ginger to it.


      • Then add the chopped onions to it.


      • Add 1/2 tsp of  turmeric powder to it.


      • Finally add salt to it.


      • Mix it well.


      • Add water and cook until little water remains.

                                 

      • Turn off the flame and keep this aside.


      • Heat a kadai and add coconut oil to it.


      • First fry the coconut slices till it becomes light brown.



      • Add the crushed shallots to it



      • Saute till it becomes light brown in color.


      • Add curry leaves now.


      • Now it's time to add the chilly powder and 1/2 tsp of turmeric powder.Saute it well.


      • When masalas are roasted well, add the cooked prawns with the gravy.


      • Saute it well on high flame.Let the prawns becomes dry and the gravy coats on it .Now turn off the flame.


      • Finally add the chopped coriander leaves and serve.
