KUTTANADAN DUCK MAPPAS IN TODDY STYLE
Mappas is a traditional dish of syrian christians in Kerala.We can prepare mappas with fish, egg and all meat varities. The most familiar of them is Duck Mappas.This can be prepared in two ways one in coconut milk gravy or in coconut paste gravy.Kuttanadan Duck is the most famous duck in Kerala.Kuttanad is a place that belong to the one of the famous district in Kerala called Alleppey. This place is famous for its backwaters because of which we get huge variety of fishes,ducks.So today we are preparing a Toddy style Duck Mappas which is really famous in Alleppey region..Let us start the step by step preparation here.
INGREDIENTS
- Duck pieces - 500 gms
- Onion sliced - 3 medium
- Ginger chopped - 3 tbsp
- Garlic chopped - 3 tbsp
- Tomato - 1 chopped
- Green chilies - 8 slited
- Coriander powder - 3 tbsp
- Red chilly powder - 2 tbsp
- Turmeric powder - 1/2 tsp
- Fennel seed powder - 1/2 tsp
- Garam masala powder - 1/4 tsp
- White pepper powder - 1/4 tsp
- Coconut grated - 1/2 cup
- Coriander leaves - 1/2 cup (leave 1 tbsp to garnish)
- Salt to taste
- Water as required
- Oil 3 tbsp
METHOD
- Keep ready Duck,veggies and masalas.
- Heat a kadai.
- Add oil to it.
- Add chopped ginger to it.
- Add chopped garlic too.
- Saute well.
- Add slitted green chilies to it
- Add sliced onions to it.
- Grind the coriander leaves with coconut grated to a fine paste.
- Add all the dry masala powders to it.
- Saute well and add little water to it.
- Let the water evaporates.
- Add duck pieces and salt to it.
- Add chopped tomatoes too .
- Saute well for 5 mins.
- Add water to it.
- When it is cooked well, add the coconut paste to it.
- Mix well and let it cook for some more mins.
- After 10 mins we can see oil appearing on top.
- Garnish with coriander leaves and turn off the flame.
Delicious Kuttanadan Duck Mappas
