MASALA DOSA




Hi.. Foodies!!!

Yet another South Indian recipe for you  today..Though it is a south indian dish,it has become one of the favourite foods not only in South but also in North India..Now a days we can find many shops solely serving Dosas..We find an immense variety of Dosas which have become an all time favourite and easy item for people to have any time..

My son loves my masala dosa....that too live dosas..It's quite natural..Dosas served hot tastes really good rather than served cold..So Dosa day in my home is little hard day for me because I cant prepare and keep and keep them in a casserole like other food items..

  •      To prepare Dosa
INGREDIENTS

  • Iddali Rice/Ponni Rice- 2 glass
  • Raw Rice                     - 1 glass
  • Broken Black gram     - 3/4 glass
  • Boiled rice                   - 1 cup
  • Fenugreek seed            - 1 tsp

  • Wash both rice together   and black gram dal also in separate bowl. Add fenugreek to the rice and soak it for min 4 hrs Its better if we soak for 8-10 hrs.
  • First grind rice with enough water. Remove the mixture to a bowl and grind black gram with 1/2 glass water. If it is not blended properly add some blended rice mixture to it instead of adding water to it and grind it properly. Now keep this in a big bowl and blend boiled rice using balance rice mixture.Mix all together with our hands properly.You can add salt if needed (Or else can add just before prepare dosa).Keep this over night..Next day check dosa batter .If it is too much thick add little water to it and mix well.

To prepare masala

INGREDIENTS

  • Potato                               - 500 gms
  • Carrot                               - 2 nos
  • Green Peas                       - 1/4 cup (here I didnt use because I 
  • Onions                              - 4 medium  finely sliced
  • Green chillies                  - 6-8( Here I m using very hot chillies dats y I m using only little you can use according to ur wish)
  • Ginger                               - 2' piece chopped
  • Garlic                                - 4-5 cloves chopped
  • Turmeric powder              -1/2 tsp
  • Red chilly powder            -1/4 tsp
  • Lemon juice                     - from 1/2 part of lemon
  • Asafoetida powder           - 2 pinch
  • Corriander leaves             - as required
  • Curry leaves salt              - as required
  • ghee                                 - as required
                            To garnish

Fried onions, Mustard seeds, Black gram dal, Red chilly, Curry leaves, Corriander leaves

                             METHOD

Cook potatoes, carrots,, with little turmeric powder, red chilly powder and salt and keep aside.





  • Heat some oil with 1 tsp ghee in a pan. Fry 3 Tb sp sliced onions till golden brown and keep aside. 

                           

  • Now add mustard seeds, when its starts to splutter add black gram dal  to it.

               


  • Now add chopped ginger,and garlic, sliced onions, chopped green chilles, curry leaves and saute till tender.
  • . We can add little salt to it so that cooking becomes faster.
               

  • .Add turmeric powder and the cooked veggies to it.
  • Smash it and mix properly.   


               




  • Add the juice of a half lemon ,2 pinch of asafoetida powder , corriander leaves and fried onions to it..and combine well..
  • Now the masla is ready to use

  •                 


    • Make flatened dosas and apply ghee over it
                     


     Add 2 - 3 tbsp of masala in the centre. when it becomes light brown fold it .and move it to a plate....


                      

    • Serve along with Coconut Chammandi, Sambar,Chammandi podi etc...
