                                    CHICKEN SAMBAR



Sambhar as we all know is a gravy curry prepared by cooking vegetables in tamarind water,adding cooked chana dal,sambar powder and finally some coriander leaves.Today I m sharing with you all a different Sambar.I have prepared today a delicious Chicken Sambar.Now a days this is very familiar in UAE and other foreign countries.For preparing this recipe I have used my own sambar powder.If home made sambar powder is not available then you can cook dal,blend it well and keep aside.Then roast some grated coconut and add sambar powder to this.Please note that do not use garam masala for this preparation.So let us get ready to  see the step by step preparation...

                                 INGREDIENTS
  • Chicken                      - 650 gms
  • Potato                        - 1 cut into small pieces
  • Onion                         - 2 sliced
  • Green chilly                - 5 slitted
  • Tomato                      - 1 big
  • Sambar powder          - 4 tbsp
  • Pepper powder           - 1/4 tsp
  • Turmeric powder        - 1/4 tsp
  • Ginger garlic paste     - 1 tbsp
  • Tamarind water         -  small quantity(Do not use more like veg sambar)
  • Salt                          -  to taste
  • Coriander leaves       -  as required
  • Oil
  • Mustard seeds           - 1/2 tsp
  • Dry red chilly            - 4
  •  Curry leaves            -  2 sprigs
                              METHOD




  •  Cut the vegetables and keep it aside.




  •  Clean the chicken pieces and keep aside.




  • First heat the kadai and add some oil.Splutter the mustard seeds,dry chilies and curry leaves.Take out this from the kadai and keep it aside to garnish at the end.Then add the sliced onions and saute for 2 mins.





  • Add green chilies to it.




  • Saute for 1 more min.




  • Add the cut potatoes to it.




  • Add 1 tbsp ginger garlic paste to it and saute well.




  • Now it is time to add the chicken pieces.




  • Add tomatoes too.




  • Add pepper powder to it.




  • Saute well till the color of chicken changes to white.





  • Add some tamarind water to it and balance plain water .




  • Allow it to boil.





  • Grind the sambhar powder in a mixie  for 1 min.





  • Add 2 tbsp of this masala and cook till the chicken is cooked.




  • When it is cooked add the balance masala and cook for 5 more mins .




  • Turn off the flame.




Serve it on a bowl and garnish with coriander leaves and fried items.

PEAS 'N' SWEET CORN RICE


                     PEAS 'N' SWEET CORN RICE



Today I am preparing a rice item with a combination of peas and sweet corn.We all have had peas and sweet corn in different recipes separately.The combination of these two together can give a really good flavor to the recipe.I just gave a first time trial to this recipe and the final dish was simply awesome.So hereby am sharing this tasty recipe with you all too.

                                                     INGREDIENTS
  •  Basmati rice                        -  2 glass 
  • Ghee                                    -  4 tbsp
  • Onion sliced                        -  1 big 
  • Onion Chopped                   -  1 medium
  • Green chilie slitted              -  4
  • Green chilly paste               -  1 tsp
  • Pepper powder                    -  1/2 tsp + 1/2 tsp
  • Garam masala                     -  1/4 tsp
  • Capsicum                            -  1 chopped
  • Sweet corn frozen               -  1 cup
  • Peas frozen                          - 1/2 cup
  • Ginger garlic paste              - 1 tbsp
  • Salt  to taste
  • Coriander leaves                 -  as required
                                          METHOD
  1. Half Boil the rice,(while cooking add salt )and keep it aside.
  2. Slice the onion and keep aside
  3. Chop the onion and keep aside
  4. Chop the capsicum and keep aside.



  •  Heat a heavy bottom pan and add the required quantity of ghee to it.






  •  When the ghee becomes hot fry the sliced onion to golden brown and keep aside.



  •  In the same oil add the chopped onions.


  •  Add ginger garlic paste to it.


  •  Add green chilly paste to it.

  • Add little garam masala to it.



  •  Add pepper powder to it.


  •  Now start adding sweet corn first.


  •  Then  add peas.


  •  Then add slitted green chilies.


  •  Then add capsicum.


  •  Add salt and saute for 3-4 mins.



  •  Add little more pepper to it.


  •  Finally add the half boiled rice to it.


  •  Level it.



  •  Garnish with fried onions.


  •  Add coriander leaves and dum for 5 mins.


  • Once it is done mix well.




                                  Garnishing with fried onions and coriander leaves!!
                                         Serve hot in a plate along with a Raita!!

Today's recipe is a hotel style Coconut Gravy Fish curry.I have added raw mango for this curry.Every one knows that mango added  fish curry is always a tempting one.Since mango is a seasonal fruit we generally use cambogia,vinegar or tamarind for preparing fish curry.Let us see the step by step presentation now....

                                                INGREDIENTS

  • Promfet fish                          -  500 gms
  • Cococnut grated                    -  3/4 cup
  • Onion                                    -  1/4 portion of a small onion
  • Coriander powder                 -  1 tsp
  • Red chilly powder                -  1.5 tsp
  • Ginger                                  -  1/2 tsp+1/2tsp
  • Garlic                                   -  1 tsp
  • Creen chilies                        -  2 slited
  • Raw mango                          - 1 cut into pieces
  • Water                                   -  2 cups
  • Coconut oil                          -  2 tbsp
  • Curry leaves                        -  2 sprigs
                                           METHOD


                                       

  • Clean the fish and keep it aside.


  • Grind the grated coconut, coriander powder, red chilly powder, ginger, garlic and onions to a fine paste.


  • Take a bowl and pour this grinded coconut masala to it.



  • Add green chilies,1/2tsp crushed  ginger and salt.


  • Then add cut raw mangoes to it.


  • Add coconut oil to it.


  • Add curry leaves to it.


  • Bring it to boil.


  • When it starts boiling add the cleaned fish to it.Cook this for half an hour in low flame till oil appears on the sides.Then switch off the flame.



                          So our Hotel Style Mango added Fish curry is ready to serve hot!!!
