PRAWNS BIRIYANI

                                       PRAWNS/SHRIMP BIRIYANI


Hi.....Today I am presenting to all a heavy recipe Biriyani. It's a mixed rice dish from the Indian Sub-continent. It is made with spices, rice and meat or fish or vegetables. We make Biriyani of different types. Mutton Biriyani and Chicken biriyani are the most famous non veg biriyanis. . Like that Prawns biriyani is also a very popular one and has become the favorite biryani for many of them.

Biriyani has a long history of being one of the important feast dishes of Muslims, with the recipe remaining exclusive with Muslims till few decades back. There are two basic types of biriyani: pakki ("cooked", also pukka) and kacchi ("raw", also kutchi). In pakki biryani, the cooked meat and cooked rice are layered. In the kacchi biryani, raw marinated meat is layered with raw rice before being cooked together. A boiled egg and mixed salad often accompanies the meat biriyani.

The non-vegetarian biryani may include chicken, mutton, beef and sea food among types of meat. Although originally cooked with meat, biryani is now also cooked with vegetables, especially in India. The vegetable biryani is prepared with rice, masala and non-meat ingredients such as potatoes and cauliflowers. Egg biryani, Dal biriyani, soya biriyani etc. are different  types of other biryanis.
Hyderabadi biriyani and Thalassery biriyani are the most famous South Indian biriyanies. The Palakkad Rawther biryani is a spicy Dum biryani prepared mainly by the Rawther Muslim community in Palakkad district of Kerala and some parts of Tamil Nadu. The variants include: lamb and mutton, chicken, beef and egg. This is accompanied by Kaichar, a type of gravy, their chuttney (curd salad) and a dessert prepared from winter melon. There are many  men and women who are specialized in commercial cooking of  Biryani, especially in the Narikkuthi area of Palakkad. Nowadays, many small shops exclusively sell Biryanis and have extremely flourished in the town.
Today I am preparing Prawns biriyani...exclusively  my own recipe… So guys....try out this…am sure this recipe is going to be a delicious one...

                                         INGREDIENTS






  • Shrimp                           - 2.5 cups( cleaned and de-veined)
  • Shrimp/Prawns             -  6 nos apply some masalas and keep aside  to fry for garnishing
  • Ginger Paste                 - 50 gms
  • Garlic paste                  - 50 gms
  • Green chillies crushed  - 6 Nos
  • Onions    to fry             - 1/2 cup sliced
  • Onions sliced                -  5 nos
  • Corriander powder       - 3 tsp
  • Red chilly powder        -1 tsp
  • Garam masala              - 1 tsp
  • Tomatoes                     - 2 big chopped
  • Turmeric powder         - 1tsp
  • Basmathi rice               - 1 kg( 6 cups) Soak for 30 mins and drain it
  • Water                           - 9 cups
  • Star anise                     - 2
  • Cinnamon                    - 3 stick
  • Cloves                         - 7 
  • Corriander leaves       - as required
  • Curd                           -1/2 cup
  • Lemon                        - 1 nos
  • Coconut milk             - 1/2 cup-- 1 cup
  • Salt                             - to taste
  • Ghee                           - 5 Tbsp
  • Oil


  • For grinding masalas
  • Red chilly powder         2 Tb sp
  • Turmeric powder           1/2 tsp
  • Pepper powder               1/2 Tsp
  • Fennel seed                    1 Tsp
  • Coriander leaves            few
  • Curry leaves                   few  ( grind this and make a fine paste)



                                     METHOD


  • Marinate the cleaned shrimps or prawns with lemon juice , salt and grinded masala.



                                      

                                      

  • Keep this aside for 30 mins.


  • Shallow fry the marinated shrimps in a heavy bottom pan 




  • Keep the fried shrimp aside.


  • In the same pan add some ghee 


  • Fry the 2 sliced onions till golden brown


  • Keep this aside.


  • In the balance ghee  and add star anise, cloves and cinnamon.


  • When it splutters add the drained rice and fry it lightly



  • Take away from fire and keep aside.


  • Boil 9 cups of water in a pressure cooker. When it starts boiling, add the fried rice,salt and close the cooker. Do not put the head .When the steam comes, put the head and simmer the fire and cook for 5 mins in low flame.After 5 mins switch off the flame and let it rest for another 5 more minutes.After 5 mins open the cooker and move the rice immediately to 2-3 flat plates, not to get sticky and keep aside.

                                     

  • In the same pan add some oil and saute the 5 sliced onions.


  • When it is half cooked add the ginger paste to it.



  • Add garlic paste and crushed green chillies to it and saute for a while.


  • Add salt to it


  • Now add the coriander powder to it.


  • Add  turmeric powder to it.


  • Add garam masala to it.


  • Add red chilly powder to it.


  • When it sautes well, add the chopped tomatoes to it.



  • Add the stem of corriander leaves to it.


  • Now add  the fried onions to it and mix well.


  • Add the curd and mix well, let it cook for 5 mins in a low flame.


  • Now add the thick coconut milk and combine well.Taste the salt


  • After 5 mins open the pan and add the cooked rice over it




  • Garnish with corriander leaves and fried onions



  • Close  the pan and keep a weight over it and dum for 10 mins in low flame.


  • Garnish  with fried prawns, coriander leaves and fried onions.


  • Serve  it on a plate .Enjoy my yummy Shrimp biriyani and please do comment.

FRUIT SALAD


               FRUIT SALAD ( A DESSERT)
 



Fruit salad belongs to a Dessert.It consists of various kinds of fruits.It can be served in different forms...either by liquid form or by cut fruits....

Yesterday my son told me to make fruit salad for him because here in our city the climate is very hot.It's a very easy recipe, and easy to cook.

So here I m presenting to you in a liquid method...I love this way..I hope you too will love this...

                                           INGREDIENTS

  • Milk                          - 750 ml
  • Sugar                        - 250 gm + 6-8tb
  • Water                       -1 cup
  • mango                      - 1 nos diced
  • Apple                        - 1/2 portion diced
  • Pappaya                     -1 cup diced
  • Orange                        -1 Nos cleaned 
  • Black currant grapes  - 15 nos
  • Custard powder         - 2 Tbsp
  • Vanilla essence         -  1 Tsp
  • Cherries and condensed milk  for decorating

                                        METHOD



  • First make sugar syrup for soaking the fruits.For that take 250 gms of sugar , 1 cup of water, a pinch cardamom powder and bring to boil. When it starts boiling add a tsp of milk to it, to clean the syrup.The sugar syrup becomes a one string form. Take it away from flame and allow this to cool.                   


                                      




  • Inbetween cut the fruits and keep it ready.


                                      

  • When the syrup cools, add the cut fruits to the syrup , mix well and keep it in refrigerator to cool. 

                                       

  • Now take 750 ml of milk and add 8 table spoons of sugar and make it to boil.




  • Take 2 table spoons of custard powder and mix it with 1/4 cup of milk,1 tea spoon of vanilla essence and keep it aside.






  • When the milk starts boiling add this custard mixture to it and stir fastly.When it thickens switch off the fire and allow it to cool.When it cools blend in a mixer if the mixture is too much thick and keep it aside.(If the custard is very thick add little milk to it, while blending).



  • Now layer some fruits in a bowl on the bottom and add the custard on top and decorette with cherry's,condensed milk and refrigerate this for 2 hrs and serve cool.


                                       

BUTTER BISCUIT

Hi...Friends....Here am with a Tea snack recipe..This is a butter biscuit.I made this in OTG.It can be made in microwave on convention mode.This is my first Biscuit recipe post.So let it be a simple and easy one for you all.We can make biscuits with and without egg.Here I m preparing eggless biscuits.
Ok guys...So watch my step by step presentation of recipe.



                                          INGREDIENTS

  • All purpose flour or maida     - 2 cups
  • Powdered sugar                      - 1 cup
  • Melted butter                          - 3/4 cup
  • Vanilla essence                        - 1/2 tsp
  • Cinnamon                                - 1 stick
  • Cloves                                     - 3
  • Cardamom                              - 4
  • Baking powder                       - 1 tsp
  • Baking soda                            - 1/4 tsp

                                         METHOD

  • Mix maida,sugar powder,baking powder and baking soda well.
  • (If we powder 3/4 cup of sugar we will get 1 cup,while grinding the sugar add 4 elachi 1 stick cinnamom and 3 cloves)


  • Add melted butter to it             


  •  Add vanila essence to it and knead well like chappathi dough.


  •  Make small balls .


  •  Place these balls on a greesed tray in an oven.Pre heat the oven for 10 mins in 200degrees.


  •  Place all the balls without touching each other.


  •  Cover it with an aluminium foil  and place it in OTG oven and bake for 20 mins.
  •  When we touch the biscuits it seems soft only.Keep this on a wire rack and allow it to cool till it becomes harder and crispy.

  • Here is your crispy Butter biscuits ....Enjoy!!!!

TODDY SHOP STYLE CRAB MASALA ( SHAAP STYLE NJANDU MASALA)

Hii Foodies.....Sorry I had a small injury on my right hand so I was in rest for 3 weeks.I have come back with yet another Toddy style dish for u guys.This is a very tasty dish named crab masala.All of you might have tasted and cooked crab.But this is a very special recipe and its very tasty too...So get ready to watch my step by step cooking recipe...




                                    INGREDIENTS

  • Crab               - 1 Kg ( cooked in little water and cleaned)


  • Red chilly powder  - 2 Tsp
  • Corriander powder - 2 Tsp
  • Pepper powder       - 1 Tsp
  • Turmeric powder   - 1/2 Tsp
  • Garam masala        - 1/2 Tsp(This masala is my own prepared masala.So it is little strong)


  • Onions chopped         - 1/2 cup
  • Tomato chopped        - 1/2 cup
  • Green chillies sliced  - 6
  • Ginger garlic paste    - 2 Tsp
  • Curry leaves
  • Corriander leaves


  • Tamarind a measurement of a small gooseberry, soak it with a 1/2 of cup of water.


                                    METHOD


  • Heat a kadai , add some coconut oil and saute chopped onions ,green chillies and curry leaves.



  • When it is half done add ginger garlic paste to it.


  • After sauting the ginger garlic paste add Red chilly powder, corriander powder,pepper powder,turmeric powder, and garam masala.


  • When the maslas get roasted well add the chopped tomatoes to it and saute for a while.


  • Now add the cooked and cleaned crab to it and combine well.


  • Add the tamarind juice to it(squeeze it and add the juice only) and add salt and mix well.


  • Cover it with a lid and cook for 30 mins in low flame.


  • When the gravy thickens ,take it away from flame.


  • Serve it on a plate and garnish with corriander leaves and tomatoes.
