                                                        VEGETABLE KURMA



Veg kurma is a mixed vegetable curry..We can use all vegetables that we like according to our taste.Kurma means  a coconut paste gravy which is added to the cooked vegetable with required garam masalas.Navaratna kurma is also one of the bests in Kurma.. Navam means number 9  so  we take 9 vegetables for preparing navaratna kuruma curry.But I m preparing a simple and easy one for you guys..It is a best side dish for rotis,parathas and rice as well.So let us start with today's preparation now.

                                INGREDIENTS


  • Potato                              -  1
  • Carrot                              -  1
  • Onion                              -  1
  • Garlic                              -  5
  • Tomato                           -  1
  • Turmeric powder            -  1/4 tsp
  • Red Chilly powder          -  1 tsp
  • Sambhar powder            -  1/2 tsp
  • Curry leaves                   -  2 sprig
  • Coriander leaves 
For masala gravy
  • Coconut                       -  1/2 cup
  • Fennel                         -  1/2 tsp
  • Hot green chilies         -  6
  • Cloves                         -  4 
  • Cinnamon                   -  2
  • Cardamom                 -  1

                                 METHOD

  •  First,cut all the required vegetable.Slice the onions and keep aside
  • Grind the coconut with fennel powder and green chilies together to a fine paste.
















  • In a cooker heat some oil add the dry masalas and crushed garlic to it.






  • Add sliced onions to it.




  • Add curry leaves too.




  • Add chopped tomatoes too.




  • Add turmeric powder to it.




  • Saute well.




  • Add the cut vegetables to it.




  • Saute this.




  • Add the grinded coconut masala to it.




  • Add little water and salt too.




  • Add chilly powder and close the cooker and make a whistle.




  • When the pressure goes down open the lid mix well and add  sambar powder to it.




  • Mix well.






Garnish with chopped coriander leaves and serve!!
