PANEER BUTTER MASALA WITH MIXED VEGETABLES




Paneer Butter Masala is a punjabi dish,But through out India this dish is very famous.Here in todays dish I cannot name the recipe as pure Paneer Butter Masala because I have prepared it in a different way.But It is very similar to that dish and also an awesome dish. The paste of shallots, garlic, ginger, cashews and tomatoes maks this dish a rich one.I have not used fresh cream.It goes well with Naan,Chapathi,poori,idiappam etc.

                                                    INGREDIENTS


  • Paneer                                       - 1 packet
  • Frozen mixed veg                       - 1/2 cup
  • Frozen corn                                - 1/4 cup
  • Onions                                       - 1/2 part sliced
  • Shallots                                     -  20 nos
  • Garlic                                        -  5
  • Ginger paste                               -  1/2 tsp
  • Tomato                                      -  2 cut into pieces
  • Capsicum                                  -  1/2 part cut into small pieces
  • Butter                                       -   2tbsp ( Here Ihave used garlic and herb butter to fry the                                                                   paneer)
  • Turmeric powder                      -   1/4 tsp
  • Coriander powder                     -   2 tsp
  • Red chilly powder                     -  1 1/2 tsp
  • Crushed cashews                      -   1/4 cup
  • Salt to taste 
  • Water as required
  • Oil 
  • Mustard seeds                       -      few
  • Fennel seed                           -      few
  • COriander leaves
                                                     METHOD

  • Cut the paneer into squares  and set ready the frozen veg and corn together.

  •  I have used this butter here you can use ordinary butter also.


  •  Heat the kadai and add the  butter to it..


  •  Fry both sides of paneer till it becomes tender.

  • Keep ready shallots and garlic.


  •  Keep aside the fried paneer in a plate.


  •  In the same pan saute turmeric powder.


  •  Next add coriander powder to it and saute well.

  • Add the red chilly powder to it and saute for few mins.


  •  Add ginger paste to it and saute it.


  •  Then add the shallots and garlic into it and saute for 3 mins.



  •  Add chopped tomato  to it.


  •  Add salt and saute well.


  •  Add crushed cashews to it and mix well.



  •  Grind this mixture in a mixie and keep this aside.
                                      



  •  Heat some oil in a kadai.


  •  Splutter mustard seeds and fennel seeds together.(If you like you can add 2 cinamons,6 cloves and 1 star anise.This is optional and I have not used here.)


  •  Saute sliced onions to it.


  •  Saute till it becomes light brown in color .


  •  When onions become light brown in color add vegetables and corn.Saute for few mins and add little salt too.



  •  Add chopped capsicum too.


  • Combine everything well.



  •  After 2 mins add the grinded masala to it.


  •  Add enough water.


  •  When it starts boiling add the fried paneer to it.


  •  Let it boil for 5 mins in low flame.


  •  Garnish with coriander and switch off the flame.
