                            CARROT LEAVES THORAN/STIR FRY



Carrots we all would have eaten in different ways.But what about carrot leaves??Some of them would not have had the carrot leaves.Even I was unaware that carrot leaves are edible.The leaves are also as nutritious as carrot rich in protein, minerals and vitamins.So dear foodies next time do not throw the leaves instead give a try to this recipe!!

                                               INGREDIENTS
  • Carrot leaves chopped          --   2 cups
  • Onion chopped                      --   3/4 cup
  •  Green chilies                        --   5 chopped
  • Coconut grated                     --   3/4 cup
  • Turmeric powder                  --  1/4 tsp
  • Jeera                                    --   a pinch
  • Shallots                                --   2
  • Garlic                                   --   3
  • Mustard seed                       --   1/4tsp
  • Curry leaves                        --    2 sprigs
  • oil to saute
  • Salt to taste                 

                                           METHOD
  • Grind coarsely the grated coconut,shallots,garlic,jeera and turmeric powder.Keep them aside.







  • Chop the carrot leaves,onions,green chilies and keep aside.




  • Heat a kadai, add some oil,splutter mustard seeds and fry curry leaves.Saute the chopped onions and green chilies together.




  • When it is half done add the chopped carrot leaves to it.


  • When the leaves get half cooked add salt and grinded coconut to it. Let it cook for some time .When all the water content leaves it can be served.



So our special Carrot Leaves recipe is ready to serve!!
