CARROT CAKE WITH CHOCOLATE ICING



Today I am presenting to you all a delicious Carrot Cake.Cakes made with carrot will be always tasty.I have prepared the cake and have given a chocolate icing for it.I feel chocolate icing will give more taste to a carrot flavored cake than other icings.Let us see the preparation.

                              INGREDIENTS
  • Carrots                                - 2 long
  • Maida                                  - 2  cup
  • Sugar                                   - 1.5 cup       
  • Oil                                        - 3/4 cup
  • Baking powder                 -  1 Tbsp
  • Vanila essence                  -  1 tsp
  • Eggs                                     -  3
For chocolate icing
  • Chocolate powder           -  1 cup
  • Sugar                                 -  1 cup
  • Milk                                   -  1/4 cup
  • Butter                                -  50 gm
  • Cashew crushed             -  3 tbsp
For chocolate cream

Take a saucepan add all the above ingredients together and mix well.Allow it to boil for 1 min. Set it to cool .Then spread it over the cooled cake.

To decorate

                        METHOD



  •  Measure the maida and keep it ready.


  •  Add Baking powder and sieve it.






  •  Peel the carrots and cut into small cubes.


  •  Take a long jar of the mixer and add the carrot cubes to it.


  •  Gently chopp it and add sugar to it.


  •  Add eggs to it.


  •  Add vanila essence to it.


  •  Add oil to it.Blend it well for 3 mins.


  •  Add maida to it.


  •  Blend it well.The mixture consistency  should be in a  ribbon fold form.


  •  Pour it to greased butter paper layed tray.


  •  Tap it well.


  •  Bake it at 170--180 degrees  for 30 mins or till it is done.


  • Allow it to cool.


  • Spread the chocolate cream over the cake. allow it to drop it on the sides.



  • Garnish it according to your taste.
