AVIYAL WITH 6 VEGETABLES


                                                AVIYAL WITH 6 VEGGIES 


Aviyal is a traditional side dish  which is common in Kerala and also in Tamil,Udupi cuisines.This is a compulsory side dish in Kerala traditional 'Sadya'. Aviyal is said to be a very healthy dish since it is prepared with all the veggies.But here I am preparing this with 6 vegetables.This is a naturopathy type recipe so it can be served to all people suffering from acidity issues.I am not using here underground vegetables like Potato that can cause more acidity but we can carrots since they are good in vitamins.Though am using only less vegetables this is a delicious one try out  friends..

                                                   INGREDIENTS

  • Golden cucumber                -  500 gms
  • Tomato                                -  2 nos cut into pieces
  • Onions sliced                      -  1 big
  • Carrot                                  -  1 medium
  • Ladies finger                       -  3
  • Long beans fresh seed        -   3/4 cup
  • Coconut grated                   -  1 cup
  • Green chilies                      -   4
  • Turmeric powder               -   1/2 tsp
  • Red chilly powder             -    a pinch
  • Curry leaves
  • Coconut oil                        - 1 tbsp
  • Fenugreek powder              - a pinch
  • Salt              


                                                      METHOD
 ....

  • Cut onions, tomato, golden cucumber, ladies finger ,long beans seed and carrot.


  • Take a pan and add all these vegetables along with little water.Add turmeric powder, red chilly powder,salt and cook well.


  • Grind coarsely the grated coconut green chilies and cumin seeds together.
  • When the veggies get cooked add this grinded coconut and cook for 5  more mins.


  • Mix well.


  • Add coconut oil and fenugrek powder to it and mix well.

  • Add curry leaves and keep it closed till it is served.


                                   Serve this delicious and healthy Aviyal and enjoy!!
