SOYA CHUNKS IN BENGAL GRAM MASALA GRAVY


Soya Chunk as we all know is very rich in proteins.It is also known as textured or texturized vegetable protien.Soya chunks are often used as a meat extender.This is available in two sizes and can be cooked easily.Today I have used Brahmins Kadala masala for preparing this.Let us see the preparation now

                                                   INGREDIENTS
  • Soya bean chunks mini                    -  100 gms
  • Onions sliced                                -   2 medium
  • Ginger paste                                  -  1/2 tsp
  • Garlic chopped                              -  1 tbsp
  • Tomato thinly sliced                     -  1
  • Brahmins kadala masala powder -   3 tbsp
  • Turmeric powder                         -   1/4 tsp
  • Coconut grated                            -   1/2 cup
  • Salt to taste
  • Oil                                                -  3 tbsp
  • Mustard seed                               -   1/2 tsp
  • Red chilly                                    -   2 cut into pieces
  • Curry leaves                                -   2 sprig
  • Coriander leaves                          -  as required
                                                  METHOD
  • Wash the soybean chunks and cook adding 1 cup of water in a pressure cooker for 5 mins.
  • Grind the coconut with 1/4 cup of water.Keep it aside.


  •  Heat a kadai.Pour oil and splutter mustard seeds.


  •  Fry the red chilies and curry leaves.Then add the chopped garlic and saute till brownish.


  •  Add sliced onions and ginger paste to it.Saute this till it is translucent.


  •  Add the brahmins kadala masala powder to it and saute for 2 mins.


  •  Now add the sliced tomato to it.Let it mix with the masala.


  •  Add 1/2 cup of water and salt to it.Let the oil appears on the top.


  •  Then add the cooked soybean chunks and combine well.


  •  Add grinded coconut and mix well.

  • Garnish with coriander leaves and serve.

GRILLED FISH


Fish can be boiled, grilled, steamed,fried, baked,smoked etc.We are aware of such different types of fish recipes.Today I have grilled Fish fillets in sauce and seasoned with some spices.Grilling is the healthiest way of cooking, since we are not frying it in oil.We are just applying oil using a brush atht too very little amount.The oil that we use here is olive oil as it is very good for health too.

                        I                INGREDIENTS
  • Fish fillet                            - 250 gms
  • Pepper powder                   - 1 tbsp
  • Paprika                              -  2 tsp
  • Lemon Juice                      - 1/2 of a lemon
  • salt  to taste
  • Ginger garlic paste             -  1 tsp
  • Chipotle sauce                   -  1.5 tbsp
  • Thyme                               -  1/4 tsp
Put some cuts on the fish fillets.Mix all the above ingredients together and apply it over it.Let it rest for about 30 mins.Bake or grill this in a pre heated oven for 30 mins for each side.

For Green Chutney
  • Coriander leaves         -  1/4 cup
  • Green chilly                -  2
  • Garlic                          - 3 clove
  • Ginger                        - a small piece
  • Lemon                        - 1/2 piece 
  • Onion                         - 1 tbsp
  • Salt to taste
Grind all together in a mixer and serve with grilled fish

GARLIC CHILLY PRAWNS -GRAVY TYPE


Chilly Prawns is a spicy Chinese dish.It has been a long time since I have prepared a Prawns dish.So today I am planning to prepare a Prawns dish for all of you.I have prepared this dish in an Indo Chinese style.For preparing this recipe first I marinated the prawns in batter.Then I fried this in oil and cooked it in garlic red chilly sauce.So let us see the preparation.
                            
                                                    INGREDIENTS
  • Prawns                                -  750 gms
  • Onion diced                        -  3
  • Ginger  Julienne                 -  1 piece
  • Garlic paste                        -   1 tbsp
  • Green chilies                      -   5 chopped
  • Tomato                               -   2 diced
  • Capsicum diced                 -   1
  • Garlic red chilly paste       -   2 tbsp( Cook garlic and Kashmiri chilly in vinegar and salt water for 15 mins , when it cools blend it in a mixer and store it in refrigerator)
  • Pepper powder                  -   3/4 tsp
  • Salt 
  • Oil
  • Spring onion chopped      -  as required
  • Corn flour batter
For Marinating Batter
  •  Eggs                              -  2
  • Salt to taste
  • Maida                             - 1/2 cup
  • Corn flour                      -  1/4 cup
  • Garlic Red chilly paste  -  1/2 tsp
  • Baking Powder              -  a pinch
                                                      METHOD
  • Mix all the marinating ingredients together  and make a batter. Dip all the cleaned prawns and keep it aside..






  •  Heat some oil in a kadai.


  •  Fry this marinated prawns slowly.(We do it slowly to avoid adding more oil to fry.If we use little oil the cooking process can be finished with this oil.)


  •  Keep aside the fried prawns.



  •  In the same oil add ginger julienne and saute for 1 min in high flame.


  •  Add garlic paste to it.

  • Then add the diced onions and saute till it becomes translucent. 


  •  Add green chillies too.


  •  Now make a hole in the center and add the garlic red chilly paste.Saute it well.



  •  Add the tomatoes and stir for 1more min .


  •  Add pepper powder to it and combine it well.


  •  Now we can add the capsicum and mix well.


  •  This is the balance batter to which I have added some water.Then I mixedwell to make the gravy.


  •  This batter is added to it and add salt to it.


  •  Add the fried garlic to it.

  • Let it boil for 2 mins.


  •  Turn off the flame and garnish with spring onions.

CHICKEN POLLICHATHU


Fish Pollichathu is one of the popular delicacies of Kerala.I thought of trying the same recipe with Chicken and the final recipe was much appreciated by my family.So I decided to share this recipe to all the Foodies.All the masalas used here have given the dish a very good aroma and flavor.Today's Chicken Pollichathu is a very yummy recipe and it can be served along with Rice, Chapati,Parota, Naan , Idiappam, pPaalappam, Puttu etc...Let us see the preparation now.

                                                  INGREDIENTS

  • Chicken                           - 1 kg pieces(Marinate the chicken with 2 tsp of red chilly powder, 1/2                                             tsp turmeric powder, salt and a pinch of garam masala)
  • Ginger crushed               -  1.5 tbsp
  • Garlic crushed                -  1.5 tbsp
  • Shallot                            -  1.5 cup
  • Green chilies                  -  7 chopped
  • Tomato chopped            -  3 
  • Red chilly powder          -  2 tsp
  • Turmeric powder           -  1/4 tsp
  • Pepper powder               -  1/2 tsp
  • Coconut milk                 -  2 cups
  • Oil                                  - 3 tbsp
  • Salt to taste
  • Curry leaves
  • Coriander leaves chopped
                                                    METHOD



  •  Clean and cut the chicken pieces.


  •  Marinate the chicken with the above listed ingredients and keep it aside for 20 mins.


  •  Heat a heavy bottom pan and add some oil.Saute crushed ginger and garlic together.


  •  Add the shallots cut into it.



  •  Add green chilies to it.Saute this well


  •  Add red chilly powder, turmeric powder,pepper powder and saute well. Then add the marinated chicken pieces to it.

  • Saute the chicken till the color changes to white.Then add the tomato pieces and saute well.


  •  Let the tomato gets mixed well with the gravy.


  •  Then add salt and coconut milk to it.


  •  When it starts to boil add the curry leaves to it.Let it cook for 30 mins in a very low flame.


  •  When it is cooked well, turn off the flame and add the chopped coriander leaves to it.
