                CHICKEN KOFTA CURRY/CHICKEN 
                            MEAT BALL  CURRY
                                                           
                                  

The dish Kofta is said to be a part of Central Asian,Southern Asian,Middle Eastern cuisines. In India Kofta will be more familiar to Northern and Central parts. Kofta can be prepared using Veg or Non Veg filling.It is usually served along with a spicy curry and is best with rice or any Indian breads.Chicken meat balls or Chicken kofta balls are made with minced meat by adding masalas to it.These balls are then fried on a nonstick pan by greasing oil and then cooked in tomato masala gravy.

                                      INGREDIENTS

  • Minced chicken meat             -  200 gms
  • Besan fried                             -  3 tbsp
  • Ginger paste                           -  1 tsp
  • Garlic paste                            -  1 tsp
  • Green chilly paste                  -  1/2 tsp
  • Red chilly powder                 -   1/2 tsp
  • Mint paste                             -   1/4 tsp
  • Garam masala powder          -   2 pinch
  • Onion powder                       -   1 tsp
  • Lemon juice                          -   1 tsp
  • Salt to taste
  • Oil or butter  to just spread on pan
For Gravy

  • Tomato                                - 1 big
  • Onion                                  - 1 big
  • Ginger                                 - 1 
  • Garlic cloves                      -  5 to 6 cloves
  • Coriander powder              -  1 heaped tbsp
  • Kashmiri chilly powder     -  1 heaped tbsp
  • Water                                 -   as required
  • Salt to taste
  • oil                                      -  3 to 4 tbsp
  •  Fresh cream                      -  3 tbsp
  • coriander leaves

                                 METHOD




  • Except besan(gram flour) and oil mix remaining ingredients well.
  • Now fry the besan till light brown color.
  • Now add the besan too and knead well like a chappathi dough.

  • Prepare small balls out of this dough.
                                  
  • Spread some oil on  a non stick pan.Place all balls one by one. Close it with a lid and every 3-4 mins turn the balls .Cook till 15-20 mins in low flame.


  • Now the Chicken koftas are ready. Keep this aside.


  • Grind ginger,garlic,tomato and onion to a fine paste.

                                     

  • Heat a kadai and splutter some mustard seeds .



  • Add coriander powder and Kashmiri chilly powder to it.


  • Saute it well. Let the masala gets fried for 3mins in low flame.

                           

  • Now add the grinded tomato paste to it.


  • Saute it well.



  • Let it leave from the sides of the pan.


  • Then add water to it.Add salt too.


  • When it starts boiling add the kofta balls to it.


  • Let it cook for 15-20 mins in low flame or till it thickens



  • Switch off the flame and add fresh cream to it.


     Serve Chicken Kofta Curry along with Naan, Chapathi, Rice      etc.....

                              AMMAYI'S SPECIAL FISH CURRY



How about preparing a special Fish curry today?This Fish curry is my own style fish curry.Here I have not used any coconut milk instead I have used Kashmiri and hot chilly powder.This dish can stay good for 2 or 3 days too..So watch out my step by step recipe and enjoy guys....

                                          INGREDIENTS
  • Fish                                   - 1 kg 
  • Red chilly powder            - 1 tbsp
  • Kashmiri chilly powder    - 1.5tbsp
  • Coriander powder             - 3 tbsp
  • Cambogia                         -  3 to 4 pieces
  • Shallots                             - 1 cup crushed
  • Ginger                              -  1 tbsp
  • Garlic                               -  2 Tbsp
  • Turmeric powder              - 1/2 tsp
  • Water                                -  2 to 3 cups
  • Oil                                    -  as required
  • Mustard seeds                  -  1/2 tsp
  • Fenugreek seeds               -  1/4 tsp
  • Curry leaves                     -  3 sprigs
                                         METHOD




  •  Heat a kadai and splutter fenugreek seeds and mustard seeds.


  •  Add curry leaves to it.


  •  Add crushed shallots, garlic and ginger paste to it.


  •  Add cambogia too and saute well till the shallots and cambogia becomes tender.


  •  Add turmeric powder to it.


  •  Now add red chilly powder, kashmiri chilly powder and coriander powder to it.


  •  Saute this well.


  •  Add 1/2 cup of water.Let it dry and leave the sides.


  •  Now add water to it again as required.


  •  Mix well and add salt to it.Allow it to boil.


  •  When it starts boiling add cleaned fish pieces to it.



  •  Mix well.


  • Close it with a lid and allow it to cook.




  •  When the gravy thickens and the oil appears on top switch off the flame.

Chicken vada is a special  snack recipe that I am presenting today for you all. This is prepared with minced meat, coconut and masalas....This is an awesome recipe with an amazing taste,I m sure you all will love this recipe.I hope nobody would have had a Vada made from chicken.Come on let us see the step by step preparation now...

                                                          INGREDIENTS
  • Minced chicken                         -  Take half part of a chicken breast( one side)
  • Coconut grated                          -  1 cup
  • Shallots                                     -  7nos
  • Garlic                                        -  10 small
  • Ginger                                       -  1 piece
  • Mint leaves paste                      -  1/4 tsp
  • Coriander leaves                       -   as required
  • Green chilly                              -   5
  • Garam masala                           -  1/4 tsp
  • Fenugreek powder                    -  1/4tsp
  • Red chilly powder                    -  1/2 tsp
  • Salt to taste
                                                    METHOD



  • Mince the chicken and keep aside . First grind ginger garlic, green chilly, shallots coriander leaves well. Then grind the coconut(do not grind like a paste form)red chilly powder, turmeric powder,mint paste fenugreek powder, garam masala, pepper powder and salt.Finally add the minced chicken and mix well.


  • After grinding it would be like the picture above.Now make small balls out of this .



  • Deep fry in oil in a very low flame.

HOT 'N' SWEET CHICKEN LEG FRY


                         HOT 'N' SWEET CHICKEN LEG FRY



Chicken hot n sweet leg fry.It's a favorite snack of kids.They like this dish very much...It has a sweet and hot taste so kids love it.Let us see the step by step presentation now.

                                  INGREDIENTS
To marinate

  • Chicken legs                           4
  • Hot Red chilly powder            1 tsp
  • Salt to taste
  • Tomato Ketchup                      2 tbsp
  • Pepper powder                         1/2 tsp
  • Light soya sauce                       1/2 tsp
To Coat 
  • Cornflour                               1 tsp
  • Corn flakes crushed                as required
Oil to fry

                                 METHOD



  •  Marinate the chicken pieces and keep aside for 1 hr..


  •  After marination sprinkle cornflour powder  to it.


  •  Now Coat the cornflakes crushed and press it tightly and keep this for 10- 15 mins.


  •  Fry this in oil.


                                     Fry and serve hot!!!!

PRAWNS BHAJI

Bhaji as we all know is an Indian snack.Main ingredients are Gram flour and vegetable in common.Today I am preparing Non-Veg Bhaji using the Prawns.This is a very good snack and a starter too at the same time.This is a super easy recipe and now we will see the preparation.

                                      INGREDIENTS
To marinate
  • Prawns                  - 3 nos  this is jhinga prawns
  • Tomato sauce       - 1 tsp
  • Soya sauce           - 1/2 tsp
  • Salt a pinch
  •  Lemon juice       -  1/2 tsp
Marinate all and keep aside.

 For dipping batter
  • Besan/Gram Flour   -  1/4 cup
  • Rice flour                 - 1 tbsp
  • Pepper powder         - 1/4 tsp
  • Red chilly powder   -  1/2 tsp
  • Garlic powder         -  1/2 tsp
  • Salt to taste
  • Water
  • Oil

                                    METHOD

                                      

  • Marinate the prawns and keep aside for 15 mins.


  •  Make the batter by mixing besan,rice flour, salt and water. Add pepper powder to it.


  •  Add red chilly powder to it.


  •  Add garlic powder to it and mix well.


  •  Set ready the batter.


  • Heat oil in a pan.



  •  Dip one by one marinated prawns and place in oil.


  •  Fry the bhajis till brown color.
